White Chocolate Macadamia Nut Cacao Muffins

Ingredients

  • 2 cups flour
  • 1/2 cup cacao
  • 1 tbsp baking powder
  • 1 tsp sea salt
  • 3/4 cup coconut oil
  • 1 1/4 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup milk
  • 1/2 cup macadamia nuts
  • 1/2 cup white chocolate chips

Instructions

  1. Pre-heat oven to 375°F
  2. Line a muffin tin with liners
  3. In a medium sized bowl, mix together dry ingredients (flour, cacao, baking powder and sea salt)
  4. In the bowl of an electric mixer fitting with blade attachment, beat together coconut oil and sugar
  5. Add eggs 1 at a time
  6. Mix in vanilla
  7. Alternate mixing in dry ingredients and milk until both are fully combined
  8. Fold in macadamia nuts and white chocolate chips
  9. Spoon mixture into liners
  10. Bake at 375°F for 20-22 minutes until a tooth pick inserted in the center comes out clean
  11. Cool and enjoy!

Notes

  • Stay fresh 3-5 days in airtight container and up to 4 weeks in the freezer
