How to Make Sweet Potato Butterscotch Pie
It starts with an easy graham cracker crust – made quickly in the food processor with just graham crackers and butter. Press the crust into a greased baking dish, bake at 350°F for 10 minutes to set the crust. Now here’s the best part… as soon as the crust comes out of the oven, while it is warm, top it with a cup of butterscotch chips and spread them in an even layer. This adds an extra layer of delicious butterscotch flavor!
Next we’ll make the pie filling! It’s only 5 ingredients – cooked, mashed sweet potato, sweetened condensed milk, instant butterscotch pudding, eggs and salt. Add all the ingredients to the bowl of your food processor and process until smooth. Spoon the filling over the pie crust and bake for 50 minutes until set!

Ingredients
Graham Cracker Crust
18 honey graham cracker sheets
8 tbsp unsalted butter, room temperature
1 cup butterscotch chips
Sweet Potato Butterscotch Pie
2 cups mashed, cooked sweet potatoes*
1 14oz can sweetened condensed milk
1 package instant butterscotch pudding
2 eggs
1 tsp sea salt
Marshmallow Whipped Cream
1 cup heavy whipping cream
1 tsp vanilla extract
1 7oz jar marshmallow fluff
Instructions
Graham Cracker Crust
Preheat oven to 350°F
Put the graham crackers and butter in the bowl of your food processor
Process on high until graham crackers are smooth
Thoroughly grease a 9.5″ pie pan
Press graham cracker crumbs into the pie pan, covering the bottom and the sides in an even layer
Bake crust for 10 minutes
Remove crust from oven
Pour 1 cup butterscotch chips on to the pie crust in an even layer
Sweet Potato Butterscotch Pie
Add 2 cups cooked, smashed sweet potato* to the bowl of your food processor
Process on high until smooth
Add the sweetened condensed milk and butterscotch pudding mix, process until smooth
Add eggs 1 at a time, process until fully combined
Add sea salt, process once more
Pour pie filling over the butterscotch chips in the pie crust, smooth with a spatula
Bake for 50 minutes until pie is set and a knife comes out clean when inserted in the center
Marshmallow Whipped Cream
Add the heavy cream to the bowl of an electric mixer fitted with a whisk attachment
Whip on high until it starts to thicken
Add the vanilla extract, continue to whip until it is thick enough that it forms peaks
Add the marshmallow fluff, whip until fully combines
Top cooled pie with dollops of marshmallow whipped cream

*About 2 medium sized sweet potatoes, skin removed
