Description
The perfect compliment to Thai curry dishes. It’s light, nutty flavor pairs well with spicy foods and it’s sticky texture makes it chopstick friendly!
Ingredients
2 cups white Jasmine rice
1 1/2 cup water
1 1/2 cup coconut milk
1 tsp salt
2 tsp lime zest
2 tbsp lime juice
1/2 tsp ground coriander
2 tbsp fresh cilantro, chopped small
Instructions
Rinse rice with cold water
Add rice to a heavy bottomed sauce pan
Pour in water and coconut milk
Add salt, stir with a wooden spoon
Bring to a boil over medium heat
Reduce to a simmer, cover for 20 minutes
Fluff rice with a fork
Add lime zest, lime juice and coriander to rice, toss
Serve with fresh cilantro
