With St. Patrick’s Day right around the corner, I wanted to share this Instant Pot Irish Beef Guinness Stew recipe! It’s a delicious way to celebrate the holiday and pay tribute to Ireland’s favorite beer!
The beef stew is cooked in a Guinness broth giving it a rich, complex flavor that will make your tastebuds come alive! Serve this stew with a loaf of Irish Soda Bread for the perfect Irish dinner.
Why make Beef Guinness Stew in the Instant Pot?
This recipe is made entirely in a 6-quart Instant Pot. Making Beef Guinness Stew in the Instant Pot as opposed to a slow cooker or on the stove top offers many benefits.
First of all, it allows you to make the stew from start to finish in under 90 minutes, while other methods take many hours.
The Instant Pot pressure cooks the stew in just 30 minutes. And that short amount of time results in tender, melt-in-your-mouth beef with a rich, flavorful broth that tastes as if you had been cooking it all day long!
Another benefit is that it’s a one-pot meal! From crisping the bacon, to browning the beef to sautéing the vegetables it’s all done in the Instant Pot using the sauté mode. This makes for easy clean-up!
What you’ll need for Instant Pot Irish Beef Guinness Stew:
Bacon – The secret ingredient! Crispy bacon is added to the stew for flavor. It nearly melts away into the stew when it’s pressure cooked, but it leaves all of it’s amazing flavor that adds an extra layer of rich deliciousness to the stew!
Beef – An obvious ingredient. Try to use large chunks of beef. When it is pressure cooked it quite literally falls apart and melts in your mouth.
Onions, Carrots, Celery – These vegetables all add their own flavors and make the dish into a hearty stew.
Flour – A little bit of flour is used to help thicken the broth.
Guinness – The not so secret ingredient! Guinness is a popular dark, Irish beer used to flavor the broth. All of the alcohol cooks out and leaves a rich, drool-worthy broth that actually doesn’t taste like beer at all.
Beef Broth – Paired with the Guinness to make the rich broth.
Potatoes – Potatoes are used in many Irish dishes, they are an optional added ingredient to this stew recipe.

Easy Irish Soda Bread Two Ways

- Total Time: 1 hour 25 minutes
- Yield: 4 servings 1x
Ingredients
4 slices thick cut bacon, chopped into 1/2 inch pieces
2 pounds beef stew meat
salt
2 tbsp olive oil
2 small yellow onions, chopped
2 large carrots, peeled and sliced
2 large cloves garlic, crushed
2 large stalks celery, chopped
1 tbsp tomato paste
2 tbsp white all-purpose flour
2 cups beef broth
1 cup Guinness
1/2 tsp dried thyme
2 small Yukon gold potatoes, peeled and chopped (optional)
Instructions
Turn Instant Pot on “Sauté” – high
Wait for Instant Pot screen to read “On”
Add the bacon, working with a wooden spoon brown the bacon for about 7-8 minutes until crispy
Strain out the bacon, set aside, discard all but 2 tbsp of the bacon grease*
Put the pot back and keep Instant Pot on ‘Sauté” – high
Generously salt the stew beef
Add half the beef to the Instant Pot to brown, work with a wooden spoon and brown for 2-3 minutes on each side
Once the first batch is down, use a slotted spoon to remove the beef from the pot and set aside
Repeat with the remaining beef
Strain the beef out of the pot and get rid of any excess liquid
Add 2 tbsp olive oil to the pot
Add the onions, carrots, celery and garlic
Sauté for 4-5 minutes
Add the tomato paste, mix
Set the vegetables aside
Add the flour to the pot and then quickly pour in 1 cup beef broth while whisking
The mixture will thicken, then pour in the second cup of broth and the guinness, whisk to combine
Bring the pot to a boil, add the thyme
Add the bacon, beef and vegetables back to the pot
Add the potatoes (optional)
Switch to “pressure cook” – high mode and set the timer for 30 minutes
Lock the lid and set the valve to “sealing”
When the Instant Pot beeps to indicate it is done, let it naturally pressure release for 5 minutes and then you can quick release using the value
When it is safe to do so, remove the lid
Serve the stew hot straight from the pot

*leave 2 tbsp of the bacon grease in the pot to brown the stew beef in
