Healthy Pistachio Date Truffles

The truffle base is made with just 3 ingredients – pistachios, dates and honey and then dipped in dark chocolate. They are packed with protein, fiber and antioxidants. These truffles make the perfect sweet treat when you want a healthy dessert option or an easy grab-and-go snack!
What You Need for Healthy Pistachio Date Truffles
Roasted, Salted Pistachios – The star ingredient! Roasted, salted pistachios are super flavorful – the fat from the nut combines with the sweetness of the dates to form a perfect truffle consistency.
Pitted Medjool Dates – Medjool Dates are a soft, juicy fruit that breaks down easily in the food processor. Their sticky consistency helps hold the truffle together with the pistachios. (this recipe works best with fresh medjool dates, if yours are dried out you can easily rehydrate them by placing them in a bowl of warm water for 5 minutes).
Honey – Just a little bit of honey adds some moister and “glue” to help hold the balls together, not to mention an extra sweet kick! (if you want to make these truffles vegan, you can skip the honey and they will still come out great)
Dark Chocolate – Makes for the perfect outer coating and compliment to the pistachios.
Coconut Oil – You could skip the coconut oil if you don’t have it on hand, but just a little bit aids in melting the chocolate as well as helping it to harden.
How to Make Healthy Pistachio Date Truffles
Simply add the pistachios, dates and honey to the bowl of your food processor and process on high for 1-2 minutes. Check the mixture to see if it holds it’s shape with pressed together, if it does it’s ready, if not, process about 30 more seconds. Be sure not to over process, if the pistachios get too broken down they will release too much oil and the balls will come out greasy!
Once the mixture is ready, use clean hands to form into 12 even-sized balls. Set on a baking sheet lined with parchment paper and place in the fridge for about an hour.
Melt together the chocolate and coconut oil. Dip the balls one by one into the chocolate mixture to coat. Sprinkle with crushed pistachios and flakey sea salt if desired.
Set the balls back on the baking sheet and place in the fridge again to set the chocolate.
How to Store Pistachio Date Truffles
You can store Pistachio Date Truffles in the refrigerator or the freezer. They will stay fresh for a few weeks in the fridge and last a few months in the freezer if stored in an air tight container.
If you choose to store them in the freezer you can enjoy them cold or leave them out on the counter to come to room temperature.

Ingredients
6 medjool dates, pitted
6oz roasted salted pistachios
1 tbsp honey
3/4 cup dark chocolate chips
1 tsp coconut oil
1 tbsp crushed pistachios
flakey sea salt (optional)
Instructions
Soak the dates in warm water for 5 minutes*
Add the dates, pistachios and honey to the bowl of your food processor
Process on high for 1-2 minutes
Check on the mixture to make sure that it holds when pressed together, if not, process for 30 more seconds and check again**
Line a baking sheet with parchment paper
Using clean hands, roll into 12 balls and place on baking sheet
Refrigerate for at least 1 hour
Add the chocolate and coconut oil to a small microwave safe bowl
Microwave for 30 second increments, mixing in between (should take 1.5-2 minutes total)
One at a time, use 2 forks to dip each ball into the melted chocolate and move it around to fully coat
Place the balls back onto the baking sheet
Sprinkle with crushed pistachios and flakey sea salt (optional)
Put the balls back into the refrigerator to set for at least 1 hour
Notes
*If your dates are fresh you can skip this step, but if your dates are at all dried out you will want to rehydrate them
**Do not over process or the pistachios will break down too much and get oily, the mixture should be granular and easy to form into a ball with your hands
