S’mores Donuts
Welcome to S’mores week here on Chocolate Covered Cheetah! I’ve got a bunch of new S’mores recipes to share with you along with a roundup of S’mores recipes I’ve found around the internet. This is all in honor of National S’mores Day on Thursday! First up are these S’more Donuts! They are a baked speculoos donut topped with marshmallow glaze, mini chocolate chips and crushed graham cracker – Yum!
Speculoos is a spread similar to peanut butter made with Biscoff cookies, you probably know it as cookie butter and it is most popularly associated with Trader Joe’s. They have Speculoos flavored EVERYTHING… seriously, they have speculoos cream cheese! The flavor is similar to a graham cracker so you will see it popping up in my S’mores recipes throughout the week!
S’mores are always a fan favorite and evoke memories of childhood and summertime. So why not eat them for breakfast 😉 I’m not sure when or who decided that a donut could fall under an appropriate food choice for breakfast, but someone did and here we are making S’mores Donuts!
Aside from the marshmallow glaze being a bit messy, this recipe is pretty easy and another fun one if you have kids that like to help in the kitchen!

Ingredients
Donuts
- 1/4 cup butter
- 1/2 cup Speculoos
- 1/3 cup packed brown sugar
- 2 eggs
- 1/2 cup sour cream
- 1 cup white flour
- 1/4 tsp sea salt
- 1/8 tsp nutmeg
- 1/2 tsp baking powder
Marshmallow Glaze
- 2 tbsp butter
- 1 cup mini marshmallows
- 1 tbsp water
- 1 cup powdered sugar
- 1 tsp vanilla
- 1/4 tsp sea salt
- 2 tbsp mini chocolate chips
- 1 sheet of graham cracker, crushed up
Instructions
Donuts
- Pre-heat oven to 350 degrees F
- In the bowl of an electric mixer fitted with blade attachment, beat together the butter, Speculoos and brown sugar until smooth, about 2 minutes
- Add eggs 1 at a time
- Fold in sour cream
- In a small bowl, whisk together the flour, sea salt, nutmeg and baking powder
- Slowly add dry ingredients to the wet mixture, mix until just combined
- Grease a donut baking pan, fill with batter
- Bake for 12 minutes, allow to cool
Marshmallow Glaze
- In a small, heavy bottomed sauce pan, melt butter
- Add marshmallows, when marshmallows start to melt add water and mix with a wooden spoon
- Reduce heat to low and add vanilla and sea salt, mix
- Slowly add the cup of powdered sugar, mix until all the sugar is dissolved and the glaze starts to thicken
- Remove from heat
- Working 1 at a time, dip the top of the donut into the glaze so it is completely coated, set on a cooling rack, sprinkle with some chocolate chips and crushed graham cracker, repeat with remaining donuts
