Ingredients
1 pound bowtie pasta
8–10 stalks asparagus
1/2 cup frozen peas
1/3 cup olive oil
2 tbsp fresh lemon juice
zest of 1 lemon
1 tsp dried oregano
1/4 tsp salt
pinch of black pepper
4–5 slices thick cut bacon, cooked and crumbled*
1/4 cup grated parmesan cheese
Instructions
Cook pasta according to package instructions
While pasta is cooking, slice off the bottom inch of the asparagus stalks and discard
Chop the rest of the asparagus into 1 inch pieces
Place the asparagus in a heat safe bowl
When pasta is cooked, pour the boiling pasta water through a colander to catch the pasta into the bowl with the asparagus
Let the asparagus sit in the hot pasta water for 4-5 minutes, this will soften it enough for the pasta salad
Transfer the pasta to a large bowl
Add the frozen peas to the hot pasta, mix
In a small bowl, whisk together the olive oil, lemon juice, lemon zest, oregano, salt and pepper
Pour the lemon dressing over the pasta
Drain the asparagus and add it to the pasta, toss
Refrigerate the pasta salad for at least 2 hours and up to 1 day
Just before serving, mix in the bacon and parmesan cheese
Serve chilled
Notes
*You can pan fry, bake or air fry the bacon, just make sure it is crispy
