Description
Kneaded by hand, this Simple Kneaded Irish Soda Bread is sweet and dry.
Ingredients

- 3.5 cups flour
- 1 cup sugar
- 1 tsp baking powder
- 2 tsp baking soda
- 1 cup raisins
- 1 tbs caraway seeds (optional)
- 1 cup buttermilk
- 1 egg
- 2 tbsp vegetable oil
- 1 tbsp pearl sugar (optional)
Instructions
- Pre-heat oven to 350 degrees
- Line a baking sheet with parchment paper
- In a large bowl mix together 3 cups of flour, sugar, baking powder and baking soda
- Add raisins and caraway seeds (optional), set aside
- In a small bowl whisk together the buttermilk, egg and vegetable oil
- Make a well in the dry ingredient mixture and pour in the wet ingredients
- Mix as well as you can with a spoon
- Sprinkle some of the reserved 1/2 cup flour onto a clean, dry surface
- Place dough on the flour
- Sprinkle dough with some more flour
- Knead dough for about 5 minutes, adding flour as needed, until dough is no longer sticky
- Form dough into a smooth mound and place on baking sheet
- Cut a cross on the top of the loaf with a knife
- Sprinkle with pearl sugar (optional)
- Bake for 40-50 minutes
- Bread is done when slightly browned on the top and knife comes out dry
- Use serrated knife to slice bread, it should be hard
