Description
A moister Irish Soda Bread made with buttermilk.
Ingredients
Scale
- 2 eggs
- 2/3 cup sugar
- 2 tbsp vegetable oil
- 2 cups buttermilk
- 3 cups sifted white all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 cup raisins
- 1 tsp caraway seeds (optional)
- 1 tbsp pearl sugar (optional)
Instructions
- Pre-heat oven to 350 degrees
- Line a 9″ by 5″ loaf pan with parchment paper
- In a large bowl, use a whisk to cream together eggs and sugar
- Add oil and buttermilk
- In a small bowl combine flour, baking powder, baking soda and salt
- Slowly add dry ingredients to wet, mixing until well incorporated
- Mix in raisins and caraway seeds (optional)
- Pour batter into loaf pan
- Sprinkle with pearl sugar, if desired
- Bake for 50-60 minutes
- Allow to cool
- Slice and enjoy
