Ingredients

- 2 medium sweet potatoes
- 2 eggs
- 1 tbsp heavy cream
- 1/2 cup whole wheat flour
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1/4 tsp rosemary
- 1/2 cup sharp cheddar cheese
Instructions
- Greese waffle iron
- Using a potato masher, in a large mixing bowl, smash the potatoes
- Add 2 eggs, mix
- Add whole wheat flour, baking soda, sea salt, pepper, rosemary, mix until fully combined
- Fold in cheddar cheese
- Heat waffle iron
- Spoon 1/4 of waffle mix into waffle maker
- Cook for 5-7 minutes until fully cooked and golden brown
- Top with desired toppings
- Serve immediately
