It’s berry season! And I’m berry excited to be shaing this Summer Berry Salad with Honey Lime Vinaigrette to kick off summer salad season!
Even though schools are still in session around here I already feel like we are halfway through the summer. Going on vacation in May will do that to you. In reality we have SO much Summer left because it is technically still Spring, ha!
You know those days when it’s too hot to cook anything? I hate to break it to you but those day are on their way back in to town. And by mid-summer it feels like that is every day around here. Though it can be miserable, this year we have this Summer Berry Salad with Honey Lime Vinaigrette to lean on and keep us cool!
The dressing is a light, tangy honey lime vinaigrette made with fresh lime juice, honey, olive oil, red wine vinegar and a pinch of salt! It’s got a hint of sweet with a whole lot of refreshing – perfect for summer!
The combo of the berries with the healthy fats in the avocado and almonds plus the creamy flavor of the goat cheese, you can’t go wrong with this salad! I see lots of nights sitting on my back porch with this salad in a bowl as big as my head in near my future 🙂

Ingredients
Salad
5oz baby spinach
5 oz baby kale
1 cup strawberries, sliced
1/2 cup blueberries
1 large avocado, sliced thin
1/4 cup goat cheese crumbles
1/4 cup slivered roasted almonds
Dressing
3 tbsp fresh lime juice
2 tbsps honey
2 tbsps olive oil
2 tbsp red wine vinegar
pinch of salt
Instructions
In a large bowl, toss together all of the ingredients for the salad.
In a small bowl, whisk together the ingredients for the dressing until the honey is fully dissolved
Pour dressing over the salad and toss to coat evenly
Notes
Can substitute or add blackberries
