When you dream of berry picking, you think of warm summer days with the sun beating down on you, frolicking through the fields in a long light dress, sampling berries as you fill up your basket. Maybe this could be the case with blueberry and strawberry picking, but with blackberries the experience is very different.
There is a reason why these precious pearls of the berry world are pretty pricey – picking them is no picnic! I have only gone blackberry picking once with a friend in New Hampshire. We were picking wild blackberries and came home with more scratches from the thrones than we did berries!
Though I may not enjoy picking them, blackberries are my favorite berry! They are so large and luscious, I can’t get enough of them! So I decided to combine them with a bunch of my other favorite foods to make this Blackberry Blue Cheese Kale Salad!
This Blackberry Blue Cheese Kale Salad is an easy, yet sophisticated summer salad. The bright flavors of the lemony kale and arugula are balanced well by the sweet blackberries and rich, creamy blue cheese. The other toppings add body and flavor really making the salad able to stand on it’s own as an easy summer lunch or dinner option.
To make this salad, start by massaging the kale in lemon juice, olive oil and salt. To that, toss in some arugula, and then start loading it up with ALL THE FIXINGS!

Description
This Blackberry Blue Cheese Kale Salad is a simple summer salad made with lemon massaged kale, fresh blackberries and flavored with creamy blue cheese.
Ingredients
6 cups chopped kale
1/4 cup lemon juice
2 tbsp olive oil
1 tsp salt
2 cups arugula
1/4 cup red onion, chopped
1/2 cup multi color cherry tomatoes, halved
1 avocado, pitted and sliced
2 hard boiled eggs, chopped
1/4 cup pecans
1/2 cup blackberries
1/2 cup blue cheese, crumbled
Instructions
Add the kale to a large salad bowl
Pour the lemon juice and olive oil over the kale
Add the salt
Using clean hands massage the kale for 1-2 minutes until it starts to breakdown and shrinks in size by half
Add the arugula, toss
Add the red onion, tomatoes, avocado, hard boiled eggs and pecans, toss
Fold in the blackberries and blue cheese
Serve immediately
