Roasted Tri-Colored Carrots with Honey-Ginger Glaze and Goat Cheese


Ingredients

  • 810 tri-colored carrots
  • 2 tbs coconut oil, melted
  • pinch sea salt and black pepper
  • 1 tsp minced ginger
  • 1 tbs honey
  • 1 tbs apple cider vinegar
  • 2 oz goat cheese
  • 1 tbs parsley

Instructions

Roast Carrots

  1. Pre-heat oven to 400 degrees
  2. Wash and peel your carrots
  3. Place on a baking sheet
  4. Brush with coconut oil
  5. Season with sea salt and pepper
  6. Bake for 35 minutes

Honey-Ginger Glaze

  1. Whisk together minced ginger, honey and apple cider vinegar
  2. Microwave on high for 15 seconds
  3. Whisk again

Glaze Carrots

  1. Allow carrots to cool for 5 minutes
  2. Brush with honey-ginger glaze
  3. Top with goat cheese
  4. Sprinkle with Parsley
