The perfect summer party cookie! These Pink Lemonade Cookies are sweet, tangy and delicious!
Ingredients
Cookies
1 cup (2 sticks) unsalted butter, room temperature
1 cup white sugar
1/2 cup pink lemonade mix (dry)
1 egg
1 tsp vanilla extract
2 cups white flour
1/2 tsp baking powder
1/2 tsp sea salt
Frosting
6 tbsp unsalted butter
2 cups confectioner’s sugar
1/4 cup dry pink lemonade mix
1 tbsp milk
1 tsp vanilla extract
pinch of sea salt
Instructions
Cookies
Preheat oven to 350°F
Add butter to the bowl of an electric mixer fitted with blade attachment
Beat butter on high until smooth
Add sugar and lemonade mix, mix until fluffy (2-3 minutes)
Add egg and vanilla extract, mix
In a large bowl whisk together flour, baking powder and salt
Slowly add dry ingredients to wet, mix until fully combined
Prepare a large baking sheet (with parchment paper or cooking spray)
Roll dough into large dough balls, drop on baking sheet
Bake for 15-17 minutes
Remove from oven and cool
Frosting
Add butter to the bowl of your electric mixer fitted with blade attachment
Beat butter until smooth
Slowly add confectioner’s sugar and pink lemonade mix
Add milk, mix
Mix in salt and vanilla extract
Once cookies are cool, frost with a thick layer of frosting
