Pink Lemonade Cookies
The perfect summer party cookie! These Pink Lemonade Cookies are sweet, tangy and delicious!
Last weekend I was out for a run and I saw some kids having a lemonade stand. It made me smile (though I quickly changed my route because I had no money with me) and brought back fond childhood memories of holding lemonade stands in our front yard.
Pink Lemonade doesn’t make a whole lot of sense… there are no pink lemons, but it’s pretty and summery and girly and fun and that’s enough for me 🙂 These Pink Lemonade Cookies are sweet and tangy and will transport you back to your childhood days sipping lemonade at the pool or chanting “Pink Lemonade for Sale, 25 cents!”
Just like pink lemonade, these cookies are quite the sugary indulgence! There is powdered lemonade mix in both the cookies and the frosting. The cookie is essentially a sugar cookie flavored with pink lemonade and then the frosted with a thick coating of pink lemonade buttercream frosting!
I think these cookies would be perfect for a bridal or baby shower, pool party or backyard bbq! They definitely aren’t an every day kind of cookie, but they are great for those fun, summer celebrations!

The perfect summer party cookie! These Pink Lemonade Cookies are sweet, tangy and delicious!
Ingredients
Cookies
1 cup (2 sticks) unsalted butter, room temperature
1 cup white sugar
1/2 cup pink lemonade mix (dry)
1 egg
1 tsp vanilla extract
2 cups white flour
1/2 tsp baking powder
1/2 tsp sea salt
Frosting
6 tbsp unsalted butter
2 cups confectioner’s sugar
1/4 cup dry pink lemonade mix
1 tbsp milk
1 tsp vanilla extract
pinch of sea salt
Instructions
Cookies
Preheat oven to 350°F
Add butter to the bowl of an electric mixer fitted with blade attachment
Beat butter on high until smooth
Add sugar and lemonade mix, mix until fluffy (2-3 minutes)
Add egg and vanilla extract, mix
In a large bowl whisk together flour, baking powder and salt
Slowly add dry ingredients to wet, mix until fully combined
Prepare a large baking sheet (with parchment paper or cooking spray)
Roll dough into large dough balls, drop on baking sheet
Bake for 15-17 minutes
Remove from oven and cool
Frosting
Add butter to the bowl of your electric mixer fitted with blade attachment
Beat butter until smooth
Slowly add confectioner’s sugar and pink lemonade mix
Add milk, mix
Mix in salt and vanilla extract
Once cookies are cool, frost with a thick layer of frosting
