Pink Champagne Cupcakes
A festive cupcake to ring in the New Year! These Pink Champagne Cupcakes are fun and fancy, made with a touch of sweet rosé champagne.
How can it be that we are down to only 3 more days of 2017!? I hope you had a nice and relaxing Christmas with your loved ones. We were up in Connecticut with my family where we had a perfectly timed White Christmas! In our minds snow and Christmas go together like peanut butter and jelly, but in reality, in most places, snow is rare in December and I can’t remember the last time we had snow on Christmas in Connecticut. It was extra special this year because it was my nephew’s first Christmas and his first time seeing snow! We woke up to an inch or 2 coating the ground and big fat flakes falling while we opened presents and ate breakfast 🙂
Christmas is by far my favorite holiday and then comes New Years Eve which is highly overrated. It’s really just another day, but there is a lot of pressure to do something special to ring in the new year. This year, we will still be traveling on NYE, but the past few years we have thrown a party. When you are the one throwing the party you don’t have to go out in the cold and you are only a hop, skip and a jump away from your bed once the ball drops! Major motivation for hosting, haha!
No matter what you are planning this NYE. Make sure these Pink Champagne Cupcakes are part of the celebration! They are fun and fabulous! There is sweet rosé champagne in both the cupcake and the frosting giving it a hint of extra flavor.

Ingredients
Cupcakes
- 1/2 cup unsalted butter, room temperature
- 1 cup white sugar
- 2 eggs
- 1/2 cup plain greek yogurt
- 1 tsp vanilla extract
- 2 cups white all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup rose champagne
Frosting
- 1/2 cup unsalted butter, at room temperature
- 1/2 tsp vanilla extract
- 1/4 cup rose champagne
- 3 cups powdered sugar
- a few drops of pink food coloring
Instructions
Cupcakes
- Pre-heat oven to 350
- In the bowl of an electric mixer, cream together butter and sugar until fluffy, about 2 minutes
- Add eggs 1 at a time
- Mix in greek yogurt and vanilla
- In a small bowl, whisk together flour, baking powder, baking soda and salt
- Alternate adding dry ingredient mixture and champagne until everything has been added and is fully combined
- Line a cupcake tin with cupcake liners
- Fill each cupcake liner 90% full with batter
- Bake for 20 minutes
- Cool completely
Frosting
- In the bowl of an electric mixer, cream butter
- Add the vanilla
- Slowly 2 cups of powdered sugar
- Add the champagne
- Add remaining cup of powdered sugar
- Mix in the food coloring
- Refrigerate at least 1 hour
- Pipe frosting on to each cooled cupcake
