Ingredients

- 1 cup coconut oil
- 3/4 cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 1.5 cups flour
- 1 cup quick oats
- 1/2 tsp sea salt
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 cup dried cranberries
- 1/2 cup raisins
- 3/4 cup shredded coconut
- 1 cup dark chocolate chunks
Instructions
- Pre-heat oven to 350°F
- In the bowl of an electric mixer, beat together coconut oil and brown sugar until fluffy
- Beat in eggs 1 at a time
- Mix in vanilla extract
- In a large bowl, whisk together flour, oats, sea salt, baking powder and baking soda
- Slowly pour dry ingredient mixture into mixer, beat until combined
- Fold in dried cranberries, raisins, coconut and chocolate chunks
- Press batter into a greased 9″X13″ baking pan
- Bake for 15 minutes
- Cool, slice into bars
