Description
These Instant Pot Garlic Parmesan Mashed Potatoes are fast and easy to make in the Instant Pot. They are chunky, cheesy and garlicky goodness! Serve as a side dish with your favorite protein!
Ingredients
2lbs red potatoes
water to cover potatoes (about 4 cups)
3 tsp salt, divided
4 tbsp butter, divided
1 shallot, chopped
6 cloves garlic, crushed
1/2 cup whole milk
1/4 cup heavy cream
1/4 cup sour cream
1 cup shredded parmesan cheese
1/2 tsp oregano
1/2 tsp garlic salt
dash of black pepper
Instructions
Wash and dry potatoes
Dice potatoes into small chunks, leave skin on
Add potatoes to the pot of your Instant Pot
Cover with water and add 2 tsp salt, mix
Set Instant Pot to “Pressure Cook” high for 8 minutes
Lock top into place and switch pressure release valve to “sealing”
When the pressure cooking is done allow the pressure to natural release for 5 minutes, then switch the valve to “venting” to release any remaining pressure
When it’s safe to do so unlock and remove lid
Drain potatoes into a colander, set aside
Return pot to cooker and switch to “Sauté” mode high
Add 2 tbsp of butter, melt
Add the shallot, using a wooden spoon sauté for 2-3 minutes
Add the garlic, sauté another 1-2 minutes
Turn Instant Pot off
Add potatoes back to pot
Still working with your wooden spoon, add 2 tbsp butter, whole milk, heavy cream and sour cream
Mix vigorously, potatoes will break down and “mash”
At this point the potatoes will still have some chunks, that is what is intended for this recipe, but if you want them smooth use a hand masher or hand held mixer to whip* them smooth (optional step)
Add the parmesan cheese, 1 tsp salt, oregano, garlic salt and pepper, mix to combine
Serve immediately

*be careful not to over-whip or potatoes may turn gummy in texture
