Cake
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups sugar
- 1 teaspoon ground cinnamon
- 3 large eggs, beaten
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 (8-ounce) can crushed pineapple, undrained
- 2 large bananas, chopped
- 1 cup pecans, chopped
Cream Cheese Frosting
- 1 package cream cheese (8oz), softened
- 1 stick butter (1/2 cup), softened
- 2 cups confectioners sugar
- 1 teaspoon vanilla extract
Instructions
Cake
- Preheat oven to 350 degrees
- In a large bowl, mix together dry ingredients (flour, baking soda, salt, sugar, cinnamon)
- In a small bowl, whisk together eggs
- Add eggs, vegetable oil and vanilla to dry ingredients and mix until just combined
- Fold in pineapple, bananas and pecans
- Pour batter into 2 greased and floured 8 inch cake pans
- Bake for 25-30 minutes or until a knife inserted in the center comes out clean
- Cool completely before frosting.
Cream Cheese Frosting
- Using an electric mixer, beat cream cheese and butter on high until smooth
- Slowly add confectioners sugar until frosting thickens and forms a peak
- Add vanilla, mix until combined
