Homemade Thai Curry Paste for Thai Cooking At Home! I’m sharing recipes for green, red and yellow Thai curry pastes you can make quickly in your food processor and use in curry dishes and soups!
You can’t talk about Thai food without talking curry! Green, red and yellow curry pastes are used in a lot of Thai dishes. The pastes can vary from mild to extremely spicy depending on the blend and are most often mixed into coconut milk to make rich curry sauces and soups.
My Thai Cooking At Home series is not meant to be difficult, quite the opposite actually, my goal is to teach you some basics around Thai cooking so you can feel confident making your favorite Thai recipes at home! I know that making your own curry paste may not be something you have time for or an interest in, and that is A-OKAY! There are some great store bought options you can use instead, I love the Thai Kitchen and Mae Ploy brands. But I wanted to share these recipes to give you the option of making homemade curry paste. Once you have gathered all the ingredients it’s as easy as throwing them in the food processor and turning it on!
How long will Homemade Curry Paste Keep?
Curry paste will stay fresh in the refrigerator for about a week. Make sure to keep it in an airtight container. These recipes are for small batch curry pastes, they make about enough for 2 curry recipes. If you want to make larger batches you can easily double, triple or even quadruple the recipes. The curry pastes can easily be frozen to use at a later date. For convenience, freeze the curry paste in an ice cube tray, that way they will be portioned into about 1 tbsp servings so you do not have to thaw all the curry at once, you can use it as you need it!
Green Curry Paste
The primary ingredient used in green curry paste is green chilis. You can vary the heat level depending on the type of green chili you choose to use.

Ingredients
2 anaheim green peppers (mild) OR 5 serrano peppers, seeds removed (hot) OR 10 Thai green chilis, seeds removed (hot)**
1 tbsp lemongrass paste
1 tbsp coriander seeds
1 tbsp Fish sauce
1 tbsp palm sugar*
2 whole shallots
4 large cloves garlic
1 tbsp fresh lime juice
3 Kaffir lime leaves***
handful fresh cilantro
1 tsp shrimp paste
1 tsp salt
Instructions
Add all ingredients to the bowl of your food processor
Process on high 2-3 minutes until smooth****
Notes
*can sub with light brown sugar
**chose peppers based on spice tolerance
***sub with 3 tsp lime zest
****coriander seeds may not break down fully, that is ok

Red Curry Paste
This red curry paste is spicy! Made with a combination of fresh and dried red chilis, even deseeding the peppers makes for a hot curry paste.

Thai Red Curry Paste
Ingredients
4–5 dried red Thai chilis*
2–3 fresh red Thai chilis, seeds removed
5 large garlic cloves
3 shallots
1 inch piece fresh ginger
1 tbsp lemongrass paste
4 kaffir lime leaves
1 tsp shrimp paste
handful cilantro
1 tbsp fish sauce
1 tsp salt
water
Instructions
Add all the ingredients (except the water) to the bowl of your food processor
Process on high, add small amounts of water as needed to thin the paste so it keeps moving through the processor until smooth
Notes
*Add more or less depending on heat tolerance

Yellow Curry Paste
The prettiest of the curry pastes, in my opinion. Yellow curry gets it’s color from turmeric and curry powder. You can vary the spice level based of the number of dried red chili peppers you choose to add.

1-inch piece ginger
3 large cloves garlic
2 whole shallots
1 tbsp lemongrass paste
1 tbsp palm sugar**
1 tbsp coriander seeds
2 tbsp curry powder
2 tsp turmeric powder***
handful fresh cilantro
1 tbsp lime juice
2 kaffir lime leafs
1 tsp fish sauce
1 tsp salt
water
Instructions
Add all the ingredients (except the water) to the bowl of your food processor
Process on high, add small amounts of water as needed to thin the paste so it keeps moving through the processor until smooth
Notes
*add more or less depending on heat tolerance

***or one 1″ piece fresh turmeric
