Energy Bites

Ingredients

Scale
  • 1/2 cup roasted unsalted peanuts
  • 8 dates, pitted
  • 2 tbs raw agave
  • 1 cup old fashioned oats
  • 1/4 cup coconut oil
  • 1/4 cup raisins
  • 1/4 cup dried cranberries
  • 1/4 cup dark chocolate chips

Instructions

  1. In your food processor, process peanuts on high until smooth
  2. Add dates, process on high
  3. Add oats, agave and coconut oil, process on high until mixture starts to form a ball
  4. Add raisins, dried cranberries and chocolate chips, pulse until chopped, but not fully processed (you want small chunks of the add-ins)
  5. Dump mixture onto a clean, dry surface
  6. Form into golf-ball sized balls
  7. Refrigerate for best taste
