Ingredients

- 2 cups white all-purpose flour
- 1/4 cup brown sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1.5 tsp cinnamon
- 3 tsp ginger
- 1/4 tsp nutmeg
- 1/4 tsp ground cloves
- 4 eggs
- 1/3 cup coconut oil, melted
- 1/2 cup sour cream
- 1/4 cup molasses
Instructions
- In a large bowl whisk together flour, brown sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg and ground cloves
- In a small bowl, beat the eggs, add melted and cooled coconut oil, sour cream and molasses
- Pour the wet ingredients into the dry, mix until fully combined
- Heat waffle iron
- Spray with non-stick spray
- Fill waffle iron with batter according to manufacturer’s instructions
- Cook until browned, crisp and cooked through
- Repeat with remaining batter
- Serve hot with maple syrup and whipped cream, if desired
