Description
This Spicy Pineapple Guacamole is the ultimate summer guac! Made with ripe avocados smashed with lime juice and spices, loaded with pineapple, jalapeño, garlic, tomato and onion.
Ingredients
6 small or 4 large, ripe avocados
3 tbsp fresh lime juice
1 tsp sea salt
1/4 tsp ground coriander
2 cloves garlic, crushed
1 roma tomato, diced
2 tbsp yellow onion, diced
2 tbsp jalapeño pepper, diced
1 cup fresh pineapple, peeled, cored and chopped into small cubes
2 tbsp fresh cilantro, chopped
Instructions
In a large bowl, smash the avocados with a fork until they reach your desired guacamole consistency*
Add the lime juice, salt and coriander, mix
Add the tomato, onion and jalapeño pepper, mix
Fold in the pineapple and cilantro
Serve immediately, or store in the refrigerator tightly sealed for up to 1 day

Notes
*I like my guac to have some whole pieces or avocado, but if you like yours smooth, keep smashing until it is how you like it
**To serve in a pineapple, carefully slice the pineapple (including the crown) in half vertically. Choose which side you want to use as the bowl. Use a knife to cut a square about 1/2 inch from the edge of the pineapple, only press down about 1 inch into the flesh. Cut down the center of the square and then divide into 6 smaller squares. Use a spoon to scoop out the squares and form a bowl for the guacamole to sit. You can then use the pineapple you cut out as the pineapple in the guacamole.
