Peas are totally underrated. Mushy, canned, pale green peas gave them a bad rap decades ago that they are still not recovered from. But frozen peas are a staple in most freezers. They are often an afterthought, when you’re finishing off a dish and you think “oh, let me throw in some peas”. But have you ever regretted that decision? … Probably not, peas add a delightful, natural, sweet pop of flavor. And here in this Minty Green Pea Hummus they are getting their chance to really shine!
The mint is a nice little flavor balancer that kicks up the summer vibes in this hummus! If you don’t like mint you could use basil or cilantro in it’s place.
How to make Minty Green Pea Hummus
Making this hummus in your food processor is a breeze!
Start off by processing the chickpeas and frozen peas. They will take the longest to break down.
Next add the garlic, mint and tahini, the garlic and mint are for flavor and the tahini helps with the smooth texture.
While the food processor is still running, slowly add the olive oil and lemon juice, these not only add flavor, but also help with the consistency and further aid in the breakdown of the chickpeas and frozen peas.
Lastly add in some salt to finish it off.
Since we are using frozen peas you will want to let the hummus come to room temperature before serving it. You can also store it in the refrigerator up to 5 days in an airtight container.
Serving ideas for Minty Green Pea Hummus
As a dip – serve in a bowl with fresh raw vegetables or pita chips for dipping.
As a spread – spread it on sandwiches or on a baguette as a delicious summer appetizer.
In salads – Add to chicken, tuna or pasta salad in place of mayonnaise or add a dollop on top of your green salad.

Ingredients
1 15.5oz can chickpeas, drained
1 16oz bag frozen peas*
2 cloves garlic
1 tbsp tahini
1/4 cup fresh mint**
1/2 cup olive oil
1 tbsp lemon juice
1/2 tsp salt
Instructions
Add the chickpeas, frozen peas to the bowl of your food processor, process on high
Add the garlic and tahini and mint process on high
Slowly add the olive oil and lemon juice, pulse until hummus is smooth
Add the salt, pulse to combine
Let the hummus come to room temperature before serving***
Hummus can be stored in an airtight container the refrigerator up to 5 days

*Or fresh, but not canned
**Can substitute fresh basil or cilantro
***It will still be too cold from the frozen peas
This recipe just fits in a regular sized food processor. If yours is smaller you might need to half it.
