I love stuffed peppers, but the truth is they can be a little messy and confusing to eat, right? Do you cut it up and eat the filling with a bite of pepper or do you eat the filling out of the pepper? This Stuffed Pepper Quinoa Skillet takes the guess work out of eating stuffed peppers. The one-skillet style meal makes it easy to get all the deliciousness of a stuffed pepper in one bite!
The skillet is packed with sautéd red, orange and yellow bell pepper slices, onions, garlic, ground beef, crushed tomatoes and tricolored quinoa topped with mozzarella cheese.

There is a lot to love about this Stuffed Pepper Quinoa Skillet!
First of all, it’s an easy, dinner that takes just about 30 minutes making it a weeknight dinner winner!
I love that it packs an extra nutritious punch with the addition of quinoa which is gluten free and high in protein! The quinoa also helps hold the dish together and keeps well as leftovers because it does not get mushy and dried out like rice would.
Perhaps what I love most is that it’s a one-skillet meal! Cast iron skillets have the unique ability to transfer seamlessly from the stove top to the oven. That makes clean-up a breeze!
How to Make A Stuffed Pepper Quinoa Skillet
Start off by heating some olive oil in your large cast iron skillet. Add the sliced bell peppers and onion to the skillet and sauté then add the garlic. Push the vegetables to one side of the skillet to make room to cook the ground beef. Add the ground beef and season with salt and oregano. Sauté the beef, browning and cooking it, then mix it in with the vegetables.
Add in the cooked quinoa and mix to combine it with the other ingredients. Pour in the crushed tomatoes and mix, be careful not to let it spill over the edge, the skillet will be very full at this point. Reduce the heat down to low and let the dish simmer for about 5 minutes.
Mix in 1/2 cup of cheese and then top the skillet with the remaining cheese. Carefully transfer the skillet to the oven to bake for 5 minutes at 400°F. After 5 minutes the cheese will be melted, but if you would like to quickly brown it, switch your oven to broil for 1 minute. Once the cheese is browned remove the skillet from the oven. Allow the dish to rest for at least 5 minutes before serving.
Ground Beef Substitutions
If you prefer, you can easily substitute the ground beef for ground chicken or turkey. Or if you would like to make it meatless you can double up on the quinoa, add 4 cups instead of 2. To make sure it’s not too dry, you will need to also add an additional 8-12oz of crushed tomatoes if you choose the meatless option!

Ingredients
3 tbsp olive oil
3 bell peppers*, cored and sliced
1 large onion, chopped
2 large garlic cloves, crushed
1 pound ground beef
1/2 tsp salt
1 tsp oregano
2 cups cooked tricolored quinoa
1 28oz can crushed tomatoes in tomato purée
2 cups shredded mozzarella cheese, divided
Instructions
Preheat oven to 400°F
Add the olive oil to a large, cast iron skillet, heat over medium-high heat
Add the sliced bell peppers and chopped onion
Using a wooden spoon sauté for 3-4 minutes
Add the garlic, sauté 1-2 more minutes
Press the vegetables to the side of the skillet and add the ground beef, salt and oregano
Working with the wooden spoon, break up the meat while it cooks, about 3-4 minutes
Mix the vegetables from the side of the skillet in with the meat
Add the cooked quinoa, mix to combine
Pour in the can of crushed tomato puree, mix
Reduce the heat to low and simmer for about 5 minutes
Add 1/2 cup of cheese and mix it in to the skillet
Add the remaining cheese on top
Put the skillet in the oven and bake for 5 minutes
Turn the oven to broil for 1 minute to brown the cheese**
Carefully remove the skillet from the oven and let rest at least 5 minutes before serving.
Notes
*I used 1 yellow, 1 red and 1 orange
**Optional, be careful not to let the cheese burn
