I think we can all agree, life feels crazy right now. With so many unknowns about when things might go back to normal and what normal will look like when it does we have to just take it a day at a time. Something that has been helping us is having little things to look forward to. Because the things we are able to do right now are limited, a lot of those little things revolve around food! For example, we order take out from one of our favorite local restaurants every Friday night, grill on the weekends and celebrate Taco Tuesday religiously! These Simple Fish Tacos with Clementine Salsa are new to our rotation and won’t be going anywhere anytime soon! They are seriously delicious.

Why pair fish tacos with Clementine Salsa
These simple fish tacos are made with fresh tilapia. Tilapia is a mild white fish that holds up well in tacos. Because of it’s mild flavor, it pairs perfectly with the bright, juicy flavor of the clementine salsa. It’s like a match made in heaven and will light up your tastebuds!
How to Make Simple Fish Tacos with Clementine Salsa
These Simple Fish Tacos with Clementine Salsa take just 45 minutes to make and that includes the 20 minutes to quick marinate the fish!
You will start by marinating the fish in a mixture of olive oil and clementine juice. This adds just a little bit of bright citrus flavor to the tilapia. After it marinates, you will pan fry it in olive oil until it is golden brown on both sides and evenly cooked through, this will take just about 10 minutes.
Once the fish is cooked, set it aside to cool and start working on the salsa. The clementine salsa is made with just fresh clementine slices, avocado and red onion, the simple combination of ingredients makes the clementines shine! Toss the salsa with some clementine juice, olive oil and salt and it’s ready to go!
To assemble the tacos, spread a thin layer of sour cream on the inside of the tortilla, lay the fish on top of the sour cream and top with a generous amount of clementine salsa. Sprinkle the tacos with cilantro and top with another dollop of sour cream.
Now it’s taco time! Dig in and enjoy immediately!
