Savory Pear Galette
This Savory Pear Galette is made with a delicious herbed parmesan crust and layered with cheeses, caramelized onions, prosciutto and Bosc pears!
Truth – this is my first galette recipe. Fact – It will not be my last 🙂
Instagram introduced me to galettes. They are very popular with food bloggers and food influencers because they are easy on the eyes. I’ve seen them popping up all over the place, both sweet and savory versions and I was intrigued. After some research and a lot of trial and error I landed on my first galette recipe and I am so in love! The crust is fool-proof and the flavors on-point. Plus you don’t have to worry about perfection because galettes are meant to look rustic – something I’m really into as we move into the Fall season! C’mon let’s make one!
The layers of a Savory Pear Galette:
Crust
If you are like me and you’re a little afraid of pie crust – have no fear! Galette crust is easy to make and hard to mess up. It’s made easily in your food processor, worked together with your hands and then chilled in the refrigerator for just 30 minutes! This savory crust uses a mixture of white and wheat flour and is flavored with parmesan cheese, oregano, onion powder and thyme! When you roll it out, perfection is not the goal, you want a more “rustic” shape since you will be folding up the sides to “close” the galette.
Caramelized Onions
While the dough chills you’ll make the caramelized onions. They do take a bit of patience, but they are so worth it! Essentially you are just cooking down a whole bunch of thinly sliced yellow onions over low-medium heat for about 30 minutes. On their own the onions will breakdown and become sweet. About half way though you will add a little brown sugar and some dry sherry to flavor and help increase the sweetness.
Prosciutto
If you want to keep this galette meatless feel free to omit the prosciutto. But if not, it adds a nice salty element that compliments the sweetness of the onions and pears.
Bosc Pears
The pear is the star of this galette. Pears pair (no pun intended) so well with savory elements. Leave the skin on and slice them thin. We are using Bosc pears because of their familiar pear shape and delicious sweet flavor.
4 Cheeses
What savory delight would be complete without cheese?! This galette uses 4 different types of cheese! The crust has parmesan cheese in it as well as sprinkled on top. The first layer of the galette is ricotta cheese that is seasoned with fresh sage and topped with gorgonzola cheese. And we top it off with gruyere!
How do you bake a galette?
To finish off the galette, fold in the sides to make the crust. Then brush it with egg white and sprinkle it with some more parmesan cheese for flavor and for presentation. Galettes are baked on a large baking sheet – no fancy pans needed! It’s best to line it with parchment paper so it does not stick to the pan. This Savory Pear Galette bakes at 400°F for about 40 minutes. You can see the crust and cheese turn a beautiful golden brown!
How do you serve a galette?
In the case of a savory galette like this one, you serve it much like you would pizza – though it does seem fancier than that, ha. Allow it to cool for a few minutes and then slice it into triangular slices. You could also slice it smaller and serve it as an appetizer.

Ingredients
Galette Dough
2 cups white all-purpose flour
1/2 cup whole wheat flour
1/2 cup grated parmesan cheese
2 tsp oregano
1 tsp onion powder
1/2 tsp thyme
1/2 tsp salt
1/2 cup unsalted butter, cold*
1 large egg
1 tsp vinegar
1/4 cup ice cold water
Caramelized Onions
1 tbsp unsalted butter
4 cups thinly sliced yellow onion (2–3 large onions)
1/2 tsp salt
1 tbsp dark brown sugar
1 tbsp dry sherry (optional)
2 large cloves garlic, crushed
Savory Pear Galette
1 Galette Dough
1/2 cup ricotta cheese
1 tbsp fresh sage, chopped
1/4 tsp salt
2 tbsp gorgonzola cheese
Caramelized Onions
5 slices prosciutto (about 2oz)**
1 Bosc pear, sliced
3/4 cup shredded gruyere cheese
1 egg white
1 tbsp water
2 tbsp grated parmesan cheese
Instructions
Galette Dough
Add the flours, parmesan cheese, salt, oregano, onion powder and thyme to the bowl of your food processor.
Process on high for about a minute
Slice the butter into tablespoons
Add them 1 at a time to the food processor and process on high for about 30 seconds in between each add
In a small bowl, whisk together the egg, vinegar and ice cold water
With the food processor is on slowly pour in the egg mixture
Continue to process until the dough starts to come together***
Pour the batter onto a clean surface
With clean hands work the dough into a ball
Place the ball of dough in the refrigerator for 30 minutes
Caramelized Onions
While the dough is chilling make the caramelized onions
Melt 1 tbsp butter in a large skillet over medium-low heat
Add the onions, sprinkle with salt
Sauté for 20 minutes
Add the dark brown sugar, sherry (optional) and garlic
Continue to sauté for about 10 more minutes, the onions will reduce to about a cup, turn brown in color and sweet in flavor
Remove skillet from heat, set aside
Savory Pear Galette
Preheat oven to 400°F
Remove the dough from the refrigerator
On a clean surface, roll out the dough to about 1/4″ thickness****
Transfer the dough to a large, parchment paper lined baking sheet
In a small bowl mix the ricotta cheese with the sage and salt
Spread the ricotta cheese mixture in the center of the dough, leaving about a 2-inch border of dough around the outside
Sprinkle the gorgonzola cheese over the ricotta
Top with the caramelized onions
Top the onions with the slices of prosciutto
Add the pear slices on top of the prosciutto in a circle
Fold the crust up to “close the galette”, gently use your fingers to close any cracks
Sprinkle the gruyere over the pears
In a small bowl whisk the egg white with 1 tbsp water
Brush the crust with the egg white mixture and then sprinkle with the parmesan cheese
Bake for 40-45 minutes
Remove from oven, cool for a few minutes before slicing and serving warm
Notes
*Place in the freezer for 10-15 minutes before use
**Optional, omit to make it vegetarian
***It won’t come together completely into a ball, but when it starts to form large crumbles it’s ready
****You don’t have to roll it out in any particularly perfect way, it can be a bit rustic
