Football season is right around the corner. I can’t say I’m excited for football, but I am extraordinarily excited for fall! I’ve been craving fall foods and fall weather since mid-July and I am psyched that it is almost here!
Most of our fall Sundays are spent with me in the kitchen working on recipes and Walter watching football. Our cozy kitchen is split into 2 parts sectioning off one area where we have a TV, coffee table and love seat so we can hang out together while I’m in the kitchen. I’m not the biggest football fan, I rarely sit down and watch a whole football game. I am usually cooking or working on something on my computer, but it’s nice that with the set up we can be together. And, of course, Layla loves it! She loves snuggling on the couch and watching out the window – Sundays are her favorite 🙂
Why is this Cornbread Skillet great for game day?
This cozy dish is easy to throw together and then join your family or friends to watch the game while it bakes. It’s an all-in-one meal so there is less clean up and it’s easy to serve to a group! Cornbread and chili are quintessential comfort foods that are well loved, so it’s bound to be a hit with a crowd!
Homemade Substitutions
This recipe originally appeared on the blog in November 2017. When I first posted this recipe I used a Trader Joe’s Cornbread Mix for the cornbread topping. I’ve since upgraded the recipe to a homemade cornbread crust, but you could choose to skip the homemade topping and use a boxed mix if that is easier for you.
For the meat seasoning I made a homemade taco seasoning, I am giving you the recipe for it below, but you can also save yourself that step and use any premixed seasoning. This meal is all about ease so do whatever makes your life easiest!

Ingredients
One Skillet Cornbread Chili
1 pound ground beef
*taco seasoning
2 tbsp olive oil, divided
3/4 cup onion, chopped
2/3 cup red pepper, chopped
1 14.5 oz can diced tomatoes
1 cup red kidney beans, drained
1 cup black beans, drained
1 cup whole kernel corn, drained
2 tbsp tomato paste
homemade cornbread topping**
1 jalapeño, sliced thin (optional)
1/2 cup sour cream (optional)
fresh cilantro (optional)
lime slices (optional)
Taco Seasoning
2 tbsp chili powder
1 tsp cumin
1/2 tsp onion powder
1/2 tsp crushed red pepper flakes
1/2 tsp oregano
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp cayenne pepper
Homemade Cornbread Topping
1 1/2 cups white flour
3/4 cup yellow cornmeal
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tbsp white sugar
8 tbsp unsalted butter, cold
1 cup buttermilk
Instructions
One Skillet Cornbread Chili
Pre-heat oven to 350°F
Heat 1 tbsp olive oil over medium-high heat in cast-iron skillet
Add ground beef, brown
Add taco seasoning, mix
Set meat aside in a medium sized bowl
Reduce to medium heat
Add another tbsp olive oil to the skillet
Add onion, sauté 2-3 minutes
Add red pepper, diced tomatoes, kidney beans, black beans and corn, mix
Mix in tomato paste, sauté 2-3 minutes
Add the meat back to the skillet
Simmer on low while you mix up the corn bread
Prepare corn bread as instructed
Spoon batter over taco meat in an even layer to cover the chili
Bake for 20-22 minutes until corn bread is set
Serve warm topped with sour cream, jalapeño, cilantro and lime slices if desired
Taco Seasoning
Mix all spices together
Homemade Cornbread Topping
Add the flour, cornmeal, baking powder, baking soda, salt and sugar to the bowl of your food processor
Pulse to combine
Add the butter 1 tbsp at a time, pulsing between each add
Set the food processor to high and slowly pour in the buttermilk until the mixture is fully combined
Notes
* you can substitute a pre-mixed taco seasoning for the homemade
**you can use a boxed cornbread instead of homemade
