Hearty Stove Top Chili
This Hearty Stove Top Chili is slow cooked on the stove top in a dutch oven. It’s made with ground beef and packed with onions, carrots, peppers, sweet potatoes and black beans. It’s rich flavor is achieved with a spice combination that includes chili, cumin, cayenne, cinnamon and nutmeg.
The days are getting shorter and colder around here, so comfort food like this Hearty Stove Top Chili are what I’m craving! Most of us are stuck at home during this time, leaving some extra time to slow cook a dinner like this one! It’s a great recipe for a lazy day around the house or perfect for game day. This chili is packed with beef, vegetables and spices that, when simmering on your stove top, fill the air with a delicious smelling aroma!

1 Large Yellow Onion
1 Large Carrot
2 Bell Peppers (red, yellow or orange)
2 Cups Diced Sweet Potato
2 Tablespoons Tomato Paste
2 Large Cloves Garlic
Salt
Onion Powder
Garlic Powder
Cayenne
Chili Powder
Cumin
Cinnamon

1 tbsp Brown Sugar
1 14.5oz Can Diced Tomatoes
1 Cup Black Beans
What to Serve with Hearty Stove Top Chili
This chili is so flavorful it can stand alone. But, if you want to dress it up a bit, add a dollop of sour cream and a side of corn bread! Other toppings that would work well are shredded cheddar cheese and fresh cilantro depending on your personal tastes.
What Makes Hearty Stove Top Chili Rich with Flavor?
Taking the time to slow cook this chili for up to 4 hours at a low simmer on the stove top really makes the flavors deepen, making it rich and delicious. The balance of the cayenne pepper (spicy) with the cinnamon, nutmeg and brown sugar (sweet) makes the flavor more complex and the longer it cooks the richer the flavors become!
Hearty Stove Top Chili

Ingredients
Chili
3 tbsp olive oil, divided
1 large yellow onion, chopped small
1 large carrot, peeled and sliced
2 bell peppers, chopped (red, yellow or orange)
2 cups sweet potato, peeled and cubed
1 pound ground beef
2 tbsp tomato paste
2 large cloves garlic, crushed
1/4 tsp salt
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp cayenne pepper
1/2 tsp ground cinnamon
1 tsp ground cumin
1 tbsp chili powder
dash of nutmeg
1 tbsp brown sugar
1 14.5oz can diced tomatoes
1 cup black beans, drained and dried
Optional Toppings
sour cream
corn bread
cheddar cheese
fresh chopped cilantro
Instructions
Heat 2 tbsp olive oil in a large dutch oven over medium heat
Add the onion, carrots, peppers and sweet potato sauté about 5-6 minutes until onions start to break down and start to become translucent
Push the vegetables to one side of the dutch oven
Add remaining 1 tbsp olive oil, heat
Add the ground beef, tomato paste and garlic cloves
Season with salt, onion powder, garlic powder, cayenne pepper, cinnamon, cumin, chili powder and nutmeg
Working with a wooden spatula, mix the spices into the meat and break the meat apart while it cooks, about 5 minutes
Add the brown sugar and diced tomatoes, mix to incorporate and dissolve the sugar
Cover the dutch oven, reduct heat to low and simmer 2-4 hours
Just before serving, mix in the black beans
Serve hot and top with cheese, sour cream and a side of corn bread, if desired
