Goat Cheese and Sun Dried Tomato Pappardelle
This Goat Cheese and Sun Dried Tomato Pappardelle is a decadent, vegetarian pasta dish made with caramelized onions, a rich, creamy goat cheese and sun dried tomato cream sauce and topped with honey toasted walnuts and fresh arugula.
Just like the chili recipe I shared last week this Goat Cheese and Sun Dried Tomato Pappardelle is a delicious, cold weather recipe for when you have a little extra time to spare in the kitchen. It calls for homemade honey toasted walnuts, caramelized onions and a rich, sun dried tomato and goat cheese cream sauce! This vegetarian recipe only feeds 3-4 people, so it would also be perfect to serve as a special holiday meal for a small group.
How to Make Sun Dried Tomato Goat Cheese Cream Sauce
I went on a real goat cheese kick a few months back and this sauce is the best thing that came from it! The creamy texture of the goat cheese makes it a great choice for a cream-based pasta sauce. Quick note, it does need to be served hot, otherwise the goat cheese starts to solidify again.
To make the goat cheese cream sauce you start by making a roux with butter, flour and heavy cream. Next, thin the roux with some vegetable broth and then melt in the goat cheese. Add garlic and the sun dried tomatoes and cook for 2-3 minutes. Reduce to a simmer and fold in the caramelized onions. Season and thin with reserved pasta water if needed. Add the pappardelle and toss to coat!
I love the tangy flavor of the goat cheese and how it pairs with both the sun dried tomatoes and the sweet, honey toasted walnuts, yum!
Do I have to use Pappardelle?
You can absolutely make this dish with a different kind of pasta if you like. I know pappardelle isn’t always available at every store. I like to make this dish with pappardelle because it is a rich pasta and pappardelle is a more indulgent pasta in my opinion. If you are going to use another pasta, fettuccine or linguine would be my suggestions for the next best choice!
