Quick Chewy Pumpkin Oatmeal Cookies, made with pumpkin puree and maple syrup for a soft, chewy texture and easy to make in under 30 minutes.
You’re looking at your new favorite fall cookie! Soft, chewy and delicious they are flavored with pumpkin purée and pumpkin pie spice. They are an easy on-the-go treat, or if you really want to spoil yourself top them with your favorite vanilla ice cream – trust me, you’ll be happy you did!
Something I love about this recipe is that you don’t have to refrigerate the dough before baking – that means no planning ahead and cookies go from thought to tummy in under 30 minutes!
What makes them soft and chewy?
I don’t know about you, but when it comes to oatmeal cookies in particular I prefer them to be soft and chewy. The secret to making them extra soft and almost ooey gooey without falling apart is the maple syrup. It helps hold them together, while maintaining the essential chewiness and it’s flavor adds extra hints of fall goodness. Of course the pumpkin purée also helps keep the cookies moist and flavorful.
Bake time also matters, we only bake the cookies for 10-12 minutes – check in on them at 10 and then let them go a few minutes longer if needed. They will just be beginning to show signs of light browning around the edges when they are ready to come out. They will be fragile so wait a few minutes to transfer them to a cooling rack.
What to add to your pumpkin oatmeal cookies?
Maybe a better question is what not to add to your pumpkin oatmeal cookies…
Chocolate Chips – duh…
Butterscotch Chips – everything is better with butterscotch
White Chocolate Chips – might as well go for the trifecta
Pecans – so good, especially with the maple syrup
Coconut – why not, go a little nuts?
Dried Cranberries – sweet and tangy, can’t go wrong
Pumpkin Seeds – because, Fall…
In all seriousness though, don’t let this list intimate you… add what you like, skip what you don’t. I’ll tell you I love a loaded cookie, the more chips, nuts, seeds the better, but if that’s not you, then tone it down a bit, the cookies will be great no matter what you choose to add or exclude.
How long will my cookies stay fresh?
Be sure to keep them in an airtight container…
on the counter top – up to 3 days.
in the refrigerator – up to 2 weeks.
in the freezer – up to 3 months.

Quick Chewy Pumpkin Oatmeal Cookies, made with pumpkin puree and maple syrup for a soft, chewy texture and easy to make in under 30 minutes.
Ingredients
1 stick unsalted butter, room temperature
1/2 cup white sugar
1/2 cup dark brown sugar
1/2 cup maple syrup
1/2 cup pumpkin puree
1 egg yolk
1 tsp vanilla extract
1 1/2 cups white all-purpose flour
1 1/2 cups old fashioned oats
1 tsp baking powder
1/2 tsp baking soda
1 tbsp pumpkin pie spice
1 tsp salt
1/2 cup chocolate chips
1/4 cup white chocolate chips
1/4 cup butterscotch chips
1/4 cup pecan pieces
1/4 cup dried cranberries
1/4 cup sweetened, shredded coconut
2 tbsp pumpkin seeds
flakey sea salt, optional for sprinkling
Instructions
Pre-heat oven to 350°F
Add the butter and sugars to the bowl of an electric mixer fitted with blade attachment
Beat on high for about 2 minutes
Add the maple syrup and pumpkin puree, beat
Add the egg yolk and vanilla extract, mix
In a large bowl whisk together all of the dry ingredients – flour, oats, baking powder, baking soda, pumpkin pie spice and salt
Slowly add the dry ingredient mixture to the mixer, mixing between adds
Once all of the dry mixture is incorporated fold in the chocolate chips, white chocolate chips, butterscotch chips, pecans, dried cranberries, coconut and pumpkin seeds
Prep 2 baking sheets by lining them with parchment paper
Scoop* the cookies onto the baking sheet, spacing evenly
Sprinkle with flakey sea salt if desired
Bake for 10-12 minutes**
Leave on the tray to cool for at least 5 minutes before transferring to a cooling rack
