- 1/2 cup coconut oil
- 1/2 cup butter
- 1 cup white sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1/2 tsp sea salt
- 1 tsp baking soda
- 1 tsp vanilla extract
- 3 cups flour
- 1 cup molasses
- 1/2 cup walnuts
- 1/2 cup raisins
- 1/4 cup pearl sugar
Instructions
- Preheat oven to 350 degrees
- Grease a 9″ by 13″ baking pan
- In the bowl of an electric mixer with paddle attachment, coconut oil, butter and sugar on high until fluffy
- Add spices, sea salt, baking soda and vanilla extract, beat
- Slowly add flour mixing on low until combined
- Slowly pour in molasses, mix until dough starts to form a ball
- Fold in walnuts and raisins
- Press dough into a smooth, even layer to fill the baking pan
- Sprinkle with generous coating of pearl sugar
- Bake for 12-14 minutes
