Grilled Pineapple Ice Cream Sundaes
These Grilled Pineapple Ice Cream Sundaes are a sweet summertime dessert! The brown sugar grilled pineapple serves as the warm base of the sundae, topped with creamy vanilla ice cream, whipped cream, caramel sauce, toasted coconut and a cherry!
With summer fast approaching these Grilled Pineapple Ice Cream Sundaes are one you will want to have at the ready! They combine 2 of my favorite things about summer – ice cream and grilling!
When you think of summer grilling your mind may not immediately turn to pineapple, but it should! Pineapple is one of my favorite things to grill! When you grill pineapple it’s sugars caramelize, which enhances it’s natural sweetness – making it the perfect base for an ice cream sundae 😉
How to Grill Pineapple
Before grilling prepare the pineapple by cutting off the top and bottom and then removing the skin. Next slice the pineapple into 1-inch wide rings. Now toss the pineapple slices with some melted coconut oil and brown sugar – this will help it get extra caramelized when you grill it!
Make sure you are starting with a clean grill! You don’t want your brown sugar grilled pineapple tasting like last week’s burgers! Heat the grill to medium-high heat, about 400°F.
Place the pineapple slices on the grill, evenly spaced. Pour some of the remaining sugar mixture over the pineapple slices. Then close the grill to allow the pineapple to cook and become nicely charred on the grill side. After 6-8 minutes flip the pineapple slices and repeat on the other side. The pineapple slices should have a good char to them, but not be burnt!
How to assemble a Grilled Pineapple Ice Cream Sundae
Once the pineapple is grilled these sundaes come together in a flash!
We’ll use the warm, grilled pineapple as the base of our sundae. Place a slice on a dessert plate and top with a large scoop of vanilla ice cream. Top the ice cream with a large dollop of whipped cream. Drizzle some caramel sauce over the sundae, sprinkle with toasted coconut and top with a cherry! Because the pineapple is warm and we are dealing with ice cream these must be served right away to avoid turning into a soupy mess!
Feel free to change up the ice cream flavors and toppings as desired!

Ingredients
Grilled Pineapple
1 ripe pineapple
1/4 cup melted coconut oil
1/2 cup brown sugar
Toasted Coconut
1/2 cup sweetened, shredded coconut
Ice Cream Sundaes
6 slices grilled pineapple
6 large scoops vanilla ice cream
1 can whipped cream
1/4 cup caramel sauce
1/2 cup toasted coconut
6 maraschino cherries
Instructions
Grilled Pineapple
Cut the top and bottom off the pineapple so it sits flat on your cutting board
Carefully slice off the skin
Lay the pineapple on its side and cut into slices about 1 inch wide
Put the pineapple slices into a gallon-sized plastic bag
Pour the coconut oil over the pineapple
Add in the brown sugar
Close the bag and shake to coat the pineapple slices evenly
Heat the grill to medium-high heat, about 400°F
Place pineapple slices on the grill, pour half of the sugar mixture that remains in the bag over the slices
Close grill and cook for 6-8 minutes, pineapple should become nicely charred on the grill side
Flip the pineapple slices, pour the remaining sugar mixture over the slices
Grill for another 6-8 minutes
Remove pineapple from grill
Toasted Coconut
While the pineapple is cooking you can toast the coconut (optional)
Preheat the oven to 350°F
Spread the coconut onto a baking sheet
Bake for 5-8 minutes until coconut is golden brown*
Allow to cool
Ice Cream Sundaes
Place 1 slice of grilled pineapple** in the middle of a small dessert plate
Top with a large scoop of vanilla ice cream
Top the ice cream with a large dollop of whipped cream
Drizzle with caramel sauce
Sprinkle on some toasted coconut
Top with a cherry

*Toss once at about 3 minutes in
