What is a Summer BBQ without dessert! These Cookie Cup Sundaes are a cool, fun treat for your Summer BBQ’s!
Ingredients
Cookie Cups
1 cup coconut oil, room temperature
1 cup white sugar
1/2 cup brown sugar
2 eggs
1 tsp vanilla extract
2.5 cups white flour
1.5 tsp baking soda
1 tsp sea salt
2 cups mini chocolate chips
Sundaes
2 pints vanilla ice cream
whipped cream
chocolate sauce
sprinkles
cherries
Instructions
Cookie Cups
Preheat oven to 350°F
In the bowl of an electric mixer fitted with blade attachment, cream together coconut oil, white sugar and brown sugar, beat until fluffy
Add eggs 1 at a time, mix
Add vanilla extract, mix
In a large bowl, sift together white flour, baking soda and salt
Slowly add dry ingredients to wet ingredients, mix until just fully combined
Fold in chocolate chips
Thoroughly grease a muffin pan
Fill each muffin tin 1/2 full with cookie dough
Bake for 12 minutes
Remove pan from oven and press a small spice jar into each cookie to form the “cup”, do not press too hard that it breaks the bottom of the cookie
Allow cookie cups to cool completely before removing them from the pan
Sundaes
Right before serving, scoop 1 large scoop of ice cream into each cookie cup, top with whipped cream, chocolate sauce, sprinkles and a cherry (or any other toppings you desire)
Serve immediately
