Nothing says summer like a good old fashioned summer bbq! And what is the best part of a bbq?! Well, the food, obviously!

My contribution to the Virtual Summer BBQ are these Cookie Cup Sundaes! These homemade cookie cups are so easy to make! The cookies are made with coconut oil rather than butter. I found that coconut oil holds the cup shape better than butter and also does not get as hard when it cools making them easier to bite into.
To form the cookie cups you will need to bake the cookies in a well greased muffin pan, once the cookies are baked immediately press a small circular object into the center of each cookie, pressing about 3/4 of the way in to the cookie. I recommend using a small, round 1-ounce spice jar to form the cup – they are the perfect size! Once you have pressed the cookies into cups you will need to allow the cookies to cool completely before removing them from the pan.
I suggest making the cookie cups the day before your party so they have time to cool completely and it’s one less thing you have to worry about the day of.
Right before you are ready to serve the sundaes you will want to construct them. I went classic with these sundaes with vanilla ice cream, whipped cream, sprinkles, chocolates sauce and a cherry, but the possibilities are endless when it comes to ice cream sundaes. You can choose your favorite ice cream flavor(s) and toppings – go crazy!
Or, rather than you constructing the sundaes yourself, set up a Cooke Cup Sundae Bar and allow guests to make their own!
These cookie cup sundaes are perfect for an outdoor party. They are a cool, delicious treat and your guests will think they are so much fun! I also love that they are a finger food- no need for spoons, just a good supply of napkins π

Description
What is a Summer BBQ without dessert! These Cookie Cup Sundaes are a cool, fun treat for your Summer BBQ’s!
Ingredients
Cookie Cups
1 cup coconut oil, room temperature
1 cup white sugar
1/2 cup brown sugar
2 eggs
1 tsp vanilla extract
2.5 cups white flour
1.5 tsp baking soda
1 tsp sea salt
2 cups mini chocolate chips
Sundaes
2 pints vanilla ice cream
whipped cream
chocolate sauce
sprinkles
cherries
Instructions
Cookie Cups
Preheat oven to 350Β°F
In the bowl of an electric mixer fitted with blade attachment, cream together coconut oil, white sugar and brown sugar, beat until fluffy
Add eggs 1 at a time, mix
Add vanilla extract, mix
In a large bowl, sift together white flour, baking soda and salt
Slowly add dry ingredients to wet ingredients, mix until just fully combined
Fold in chocolate chips
Thoroughly grease a muffin pan
Fill each muffin tin 1/2 full with cookie dough
Bake for 12 minutes
Remove pan from oven and press a small spice jar into each cookie to form the “cup”, do not press too hard that it breaks the bottom of the cookie
Allow cookie cups to cool completely before removing them from the pan
Sundaes
Right before serving, scoop 1 large scoop of ice cream into each cookie cup, top with whipped cream, chocolate sauce, sprinkles and a cherry (or any other toppings you desire)
Serve immediately
Notes
Make it interactive for your guests and let them build their own Cookie Cup Sundaes. Set out the cookie cups, a few flavors of ice cream and a variety of toppings for them to choose from!
