Coconut Brownie Bars
These Coconut Brownie Bars are a coconut lovers dream! A rich, decadent dark chocolate coconut brownie is the base layer, topped with a creamy coconut filling and finished off with smooth milk chocolate on top!
Much like chocolate and peanut butter, chocolate and coconut is another flavor combo match made in heaven! These brownies are like Mounds bars on steroids and are seriously addicting!
The Layers
These Coconut Brownie Bars are 3 layers of deliciousness.
Coconut Brownie Base
The brownie base is similar to the one used in my very popular Mexican Chocolate Brownies. It’s a dark chocolate brownie made coconut oil, which makes it perfectly fudgey, and coconut extract to give it just the right balance of coconut flavor.
Creamy Coconut Filling
The coconut filling is made with sweetened, shredded coconut mixed with cream of coconut and confectioners sugar. It is thick and creamy and the sweet flavor balances well with the rich, dark chocolate of the brownies.
Smooth Milk Chocolate Topping
These bars are finished off with a thin, smooth layer of milk chocolate. We melt the milk chocolate with some coconut oil and then spread it over the bars. This helps the chocolate firm up to just the right consistency.
How to Store Coconut Brownie Bars
You may find that these brownies disappear so quickly you won’t even need to store them! But if you do, they keep best in the refrigerator up to 5 days. If you want to keep them longer than that, store them in the freezer. Thaw on the countertop for about 2 hours before serving. Before storing in the fridge or freezer, make sure they are completely cooled and store in a gallon sized bag or air-tight container.
Hot Tip: Well actually a cold tip ;)… eat them frozen for a delicious, cool summer treat!

Description
These Coconut Brownie Bars are a coconut lovers dream! A rich, decadent dark chocolate coconut brownie is the base layer, topped with a creamy coconut filling and finished off with smooth milk chocolate on top!
Ingredients
Brownie
2 oz semi-sweet baking chocolate
1/2 cup coconut oil
1/2 cup white sugar
1/2 cup brown sugar
3 eggs
1 tsp vanilla extract
1.5 tsp coconut extract
3/4 cup dark chocolate cocoa powder
1/2 cup white all purpose flour
1/2 tsp baking soda
1/2 tsp sea salt
1/2 cup dark chocolate chunks (optional)
Coconut Filling
7oz sweetened shredded coconut
1/2 cup cream of coconut
1/2 cup confectioners sugar
Milk Chocolate Topping
1 cup milk chocolate chips
2 tbsp coconut oil
Instructions
Brownies
Preheat oven to 350°F
Melt chocolate and coconut oil together until smooth (in the microwave on defrost, stirring every 30 seconds until completely melted or in a double boiler on the stovetop)
In the bowl of an electric mixer fitted with blade attachment, add the melted coconut oil and chocolate mixture
Add the white and brown sugar, mix until fully combined
Add eggs 1 at a time
Mix in vanilla and coconut extracts
In a small bowl, whisk together cocoa powder, flour, baking soda and sea salt
Slowly add dry mixture to the wet ingredients, mix until fully combined
Fold in dark chocolate chunks
Spread batter in an even layer in a throughly greased 9X9″ brownie pan
Bake for about 22 minutes until brownies are set
Allow to cool while you make the coconut filling
Coconut Filling
In a medium sized bowl mix the shredded coconut with the cream of coconut
Add the powdered sugar, mix until dissolved
Carefully spread the coconut mixture over the warm brownies* in an even layer
Put the brownie pan in the freezer for 20 minutes to set
Milk Chocolate Topping
Add the milk chocolate chips and coconut oil to a small glass bowl or double boiler
Melt the chocolate and coconut oil together until smooth (in the microwave on defrost, stirring every 30 seconds until completely melted or in a double boiler over medium heat on the stovetop)
Remove the brownies from the freezer
Pour the melted chocolate mixture the brownies and use a spoon or small spatula to spread it in an even layer
Put back in the freezer for 10 more minutes
Remove brownies from freezer
Carefully use a sharp knife to slice the brownies into bars
Notes
*It is easier to spread when the brownies are still warm, but be careful because the warm brownies can easily crack
