Coconut Red Curry Salmon Burgers

Remember when a burger was just a burger? There was no such thing as a chicken burger, tofu burger, SALMON burger! But lucky for us times have changed and you can make anything into burger form these days!

How is it August already! I know I say this every month, but I cannot believe another month has come and gone! July was quite literally a wash, it rained SO much! I cannot ever remember a summer like this where it has rained so consistently and so hard! It hasn’t been those late afternoon thunderstorms, it’s been day long monsoons!
All this rain has been messing with our grill time! So I had to take matters into my own hands with these Coconut Red Curry Salmon Burgers. They are made in a skillet, not on the grill. But they are so full of flavor you won’t mind!
The stars of this burger show are:
1. the salmon – use fresh if possible for the best flavor!
2. the red curry paste – this is my fav red curry paste!
3. the coconut – I use a finely ground unsweetened coconut that I find in the fruit and nut section of my grocery store.
Using your food processor you will combine all the ingredients for the burgers making the burger “meat”.
Next, form it into burger patties and cook the burgers until golden brown in a skillet with coconut oil.
The final step before assembly is to whip up a quick red curry mayo! Made with mayo, red curry paste and lime juice. The mayo gives the burgers an extra curry kick!
To assemble the burgers, add each burger a top a burger bun bottom, top the burger with a dollop of the mayo, arugula and the bun top!
Then you are ready to dig in!

Ingredients
Burgers
2 cups salmon (about 1 pound)
1 cup shredded coconut (unsweetened)
2 tbsp red curry paste
2 eggs
1/2 tsp sea salt
1/2 tsp coriander
2 tbsp scallions
1 cup bread crumbs
3 tbsp coconut oil
Red Curry Mayo
1/3 cup mayonnaise
1 tsp red curry paste
1 tsp lime juice
Assembly
6 buns
1 cup arugula (optional)
Instructions
Burgers
Cut salmon into pieces, add to the bowl of a food processor
Add coconut, red curry paste, eggs, sea salt and coriander to the food processor
Pulse until the salmon is completely processed
Add scallions, pulse to chop fine
Add bread crumbs, pulse until just combined
Form salmon burger mixture into 6 burger patties
Heat coconut oil over medium-high heat in a large skillet
Add the burgers, cook for 3 minutes on each side until golden brown
Reduce heat to medium-low and cook for 3-5 more minutes to ensure the burgers are cooked through
Red Curry Mayo
In a small bowl, mix together mayonnaise, red curry paste and lime juice
Assembly
Place a burger a top each burger bun bottom
Top each burger with a dollop of red curry mayo
Top with arugula
Top with burger bun top
Serve immediately
