Description
A Christmas twist on a classic cookie, these festive White Chocolate Macadamia Nut Candy Cane Cookies will make a great addition to your holiday baking line up!
Ingredients
2 1/2 cups white all-purpose flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup unsalted butter, room temperature
1/2 cup white sugar
1 cup light brown sugar
2 large eggs
1 tsp vanilla extract
1/2 cup macadamia nuts, chopped
2/3 cup white chocolate chips
1/2 cup crushed candy cane*
Instructions
In a medium sized bowl, whisk together dry ingredients – flour, baking powder, baking soda and salt
Add butter to the bowl of an electric mixer fitted with blade attachment, beat
Add white and brown sugars, beat until sugar is fully combined, scrape down the sides of the bowl with a spatula, if necessary
Add eggs 1 at a time, beat
Add vanilla extract, mix
Slowly add the dry ingredient mixture into the mixer, mix until fully combined, do not over mix
Mix in macadamia nuts, white chocolate chips and crushed candy cane, mix until combined
Refrigerate dough for at least 2 hours and up to 24 hours
When ready to bake, pre-heat oven to 350°F
Remove dough from refrigerator, roll into golf ball sized dough balls
Evenly space dough balls on a baking sheet lined with parchment paper
Bake for 14-16 minutes
