It’s easy to get caught up dreaming of sugar cookies this time of year… but we have to make some room for greens in our life, and I don’t mean evergreens…
This Pear and Pomegranate Christmas Salad is made with a base of baby kale mix, pear slices, pomegranate seeds, chopped onion, dried cranberries, toasted pine nuts and blue cheese. It’s tossed with a simple maple vinaigrette made with just 4 ingredients – maple syrup, olive oil, apple cider vinegar and salt.
All tossed together this salad makes a perfect addition to your Christmas dinner. Often Christmas dinner is something on the heavier side and the flavors in this salad compliment a heavier dish well.
Have some pickier eaters coming to Christmas dinner? No problem! Make it into a “build-your-own” salad bar. Put all of the toppings into individual bowls and let your guests pick and choose what they want in their salad and top it with as much or as little dressing as they like!

Ingredients
Maple Vinaigrette
1/3 cup olive oil
1/3 cup maple syrup
1/2 cup apple cider vinegar
1/2 tsp sea salt
Toasted Pine Nuts
1 tbsp olive oil
2 tbsp pine nuts
Pear and Pomegranate Salad
1 5oz package baby kale mix*
1 cup pear, chopped**
1/2 cup pomegranate seeds
1/4 cup white onion, chopped
1/4 cup blue cheese crumbles
2 tbsp dried cranberries
2 tbsp toasted pine nuts
Instructions
Maple Vinaigrette
In a jar with a tight lid, add all of the vinaigrette ingredients, shake until well combined
Toasted Pine Nuts
Heat the olive oil over medium heat in a small skillet
Add pine nuts
Constantly tossing to make sure they do not burn, toast the pine nuts until golden brown, 2-3 minutes
Remove from heat, using a slotted spoon move pine nuts to a paper towel, cool
Pear and Pomegranate Salad
In a large salad bowl, add all of the salad ingredients and toss
Drizzle with desired amount of maple vinaigrette, toss
Serve immediately
