Christmas Thumb Print Cookies

Ingredients

Scale
  • 1 cup unsalted butter (2 sticks) – room temperature
  • 2/3 cup white, granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups + 2 tbsp all purpose flour
  • dash of sea salt
  • 3/4 cup jam (approximately)

Instructions

  1. Preheat oven to 375 degrees
  2. Beat butter and sugar on high in an electric mixer until fluffy, about 2 minutes
  3. Beat in egg yolk and vanilla extract
  4. Add flour and salt, mix until just fully incorporated and dough forms a ball
  5. Form into 1 inch balls and place on baking sheet
  6. Press your thumb into the center of each ball forming a shallow hole where the jam will go
  7. Bake for 8-10 minutes
  8. Remove from oven and fill the thumb print holes with a dollop of jam
  9. Return to over for 4-5 more minutes
  10. Remove from oven and cool for 2 minutes before transferring to cooling rack
