- 1 cup unsalted butter (2 sticks) – room temperature
- 2/3 cup white, granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 cups + 2 tbsp all purpose flour
- dash of sea salt
- 3/4 cup jam (approximately)
Instructions
- Preheat oven to 375 degrees
- Beat butter and sugar on high in an electric mixer until fluffy, about 2 minutes
- Beat in egg yolk and vanilla extract
- Add flour and salt, mix until just fully incorporated and dough forms a ball
- Form into 1 inch balls and place on baking sheet
- Press your thumb into the center of each ball forming a shallow hole where the jam will go
- Bake for 8-10 minutes
- Remove from oven and fill the thumb print holes with a dollop of jam
- Return to over for 4-5 more minutes
- Remove from oven and cool for 2 minutes before transferring to cooling rack
