Buffalo Chicken Meatloaf
This Buffalo Chicken Meatloaf is so simple to make and exploding with flavor! It’s everything you love about buffalo chicken packed into a meatloaf – including celery and blue cheese!
Let’s just say, this is not your average meatloaf! Take your average meatloaf and turn it up about 10 notches and you will have this Buffalo Chicken Meatloaf! If you are a buffalo chicken fan you are going to LOVE this meatloaf. Hot out of the oven it’s hard to resist, but I even find myself reaching for a slice cold out of the refrigerator for lunch! It’s the kind of thing that seems to get even better after it sits for a day or two!
Meatloaf may not be the prettiest dish you can make, but it sure is easy! Throw everything into a bowl, mix it up and pop it in a loaf pan. The hardest part is patiently waiting for it to cook in the oven!
What you need for Buffalo Chicken Meatloaf
You will need a bowl for mixing and a loaf pan for baking – that’s it for gear.
For ingredients you will need:
Ground Chicken
Egg
Flour
Onion powder
Garlic Powder
Salt
Black Pepper
Buffalo Sauce
Crumbled Blue Cheese
Celery
Onion
Ketchup
How to Make Buffalo Chicken Meatloaf
In a large bowl, mix together all of the ingredients except the ketchup and 1 tablespoon of buffalo sauce. Transfer the chicken mixture to a loaf pan and smooth the top with a spatula. Mix together the ketchup and buffalo sauce, spread on top of the meatloaf – this will form a glaze on top of the meatloaf as it bakes. Bake the meatloaf at 350°F for 70-75 minutes until it is fully cooked through. Let the meatloaf rest for at least 10 minutes before you try to remove it from the pan or slice it. If you try to cut it when it is too hot it may fall apart.
Serve the meatloaf warm, or store it in an airtight container in the refrigerator. You can reheat it in the microwave or eat it cold on a sandwich.
HOW TO MAKE AHEAD AND FREEZE
To Make Ahead: You can easily make this meatloaf in advance. Mix up the meat mixture as if you were getting ready to bake it, rather than transfer it to a loaf pan, simply cover the bowl with plastic wrap and store in the refrigerator until you are ready to bake it. Right before baking, transfer the meat mixture to the loaf pan and top with the buffalo/ketchup glaze.
To Freeze: I recommend freezing the meatloaf before cooking. Press the meat in a loaf pan and cover tightly first with plastic wrap and then with aluminum foil, label it so you don’t forget what it is! You can store it this way in the freezer for 2-3 months. When you are ready to eat it, take it out of the freezer and place in the fridge to thaw overnight, then bake according to the recipe instructions.

Ingredients
1 pound ground chicken
1 large egg
2 tbsp white all-purpose flour
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
dash black pepper
1/3 cup + 1 tbsp buffalo sauce, divided
1/3 cup crumbled blue cheese
1/4 cup celery, diced small
1/4 cup yellow onion, diced small
2 tbsp ketchup
Instructions
Preheat oven to 350°F
Add the ground chicken to a large bowl
Add the egg, flour, onion powder, garlic powder, salt and pepper
Mix to combine with the ground chicken
Add 1/3 cup buffalo sauce, blue cheese, celery and onion, mix*
Throughly grease a 8.5″ loaf pan with cooking spray
Transfer the meat mixture to the pan and smooth top with a spatula
In a small bowl mix together the ketchup and 1 tbsp hot sauce
Spread the ketchup/hot sauce mixture over the meat as a glaze
Bake for 70-75 minutes
Remove from oven and let rest about 10 minutes before removing the meatloaf from the pan or slicing
