Ingredients
1 1/2 cups white all-purpose flour
1 tsp salt
1 tsp baking soda
1 stick unsalted butter, softened
1/2 cup packed brown sugar
1/2 cup white sugar
1/2 cup sour cream
3 large ripe bananas (or roasted, see post)
3 large eggs, room temperature
1 tsp vanilla extract
1 cup butterscotch chips
1 yellow banana (optional)
Instructions
Preheat oven to 325°F
In a small bowl whisk together the flour, salt and baking soda, set aside
In the bowl of your electric mixer fitted with blade attachment add the butter and sugars
Beat on high to cream the butter and sugars together until fluffy, about 2-3 minutes*
Add the sour cream, mix to combine
Add the bananas, beat until the bananas are smoothly combined
Add eggs 1 at a time, mixing in between
Add the vanilla, mix
Slowly add the dry ingredient mixture to the wet ingredients, mix until just combined
Fold in the butterscotch chips
Throughly grease a 9 X 5″ loaf pan
Spoon the batter into the pan to fill it 3/4 of the way full
Smooth the batter into an even layer
Slice the yellow banana length wise and place the 2 halves on top of the batter for decoration**
Notes
*scrape down the sides of the mixing bowl with a rubber spatula as needed while creaming
**this is totally optional, it makes the banana bread look beautiful, but sometimes it can also make it bake slightly less evenly
