Description
These Fluffy Cinnamon Sugar Buttermilk Pancakes are the perfect lazy morning breakfast! The buttermilk makes them thick and fluffy and the cinnamon sugar gives them a delicious sweet and spiced flavor.
Ingredients
2 cups white, all-purpose flour
1/4 cup dark brown sugar
2 tsp cinnamon
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 egg
1 tsp vanilla extract
2 cups buttermilk
2 tbsp unsalted butter
Instructions
Sift flour into a large bowl
Add the dark brown sugar, whisk
Add the cinnamon, baking powder, baking soda and salt, whisk
Switch out the whisk for a large spoon, add the egg and vanilla, mix
Fold in the buttermilk, mix until just combined, do not over mix
Heat a large skillet over medium heat, add the butter
Once the butter is melted, scoop about 1/3 cup of the batter into the skillet and form into a circular shape*
Repeat with remaining batter**
Cook on the first side until the batter starts to form bubbles about 4-5 minutes
Flip, cook for about the same about of time on the other side***
Plate and stack the pancakes, serve as you like (with butter, maple syrup, jam, whipped cream, etc…)
Notes
*The batter is pretty thick so you will need to use the back of a spoon to help form the pancake.
**I was able to make 4 pancakes at a time, but it depends on the size of your skillet
