Blackened Salmon Tacos with Mango Avocado Salsa
Before we dive into these Blackened Salmon Tacos, quick update about Layla’s first sailing adventure — it was a success! She’s now Captain Little Layla! She didn’t mind her life jacket at all (she normally hates all clothing and accessories) and she enjoyed the wind blowing through her hair and the sun beating down on her! Aside from being splashed once by 1 wave we had a happy pup on board 🙂
Can you believe it is Friday already?! It was a short week for most, while these 3 days weeks are awesome and I am more than happy to be gearing up for the weekend again, it’s hard to squeeze 5 days of work into 3! Quick and easy meals are essential for weeks like these. These Blackened Salmon Tacos are not only quick and easy they are also delicious!
Seriously, I have made them 3 times since developing this recipe and I am dreaming about all of the other things I can blacken — chicken, shrimp, tofu, maybe even pineapple 🙂
You should use your cast iron skillet to get the perfect crisp on your salmon after coating it in the spice mix and then transfer it to the oven to finish off the cooking.
The blackened salmon is loaded with flavor that pairs perfectly with the zesty fruit flavor of the Mango Avocado Salsa.
Best if served with a side of Cilantro Lime Sticky Rice 🙂
