Ingredients

- 2 large ripe bananas
- 2 cups quick cook oats
- 2 tbsp chia seeds
- 1 egg
- 2 tbsp coconut oil, melted
- 1 tbsp honey
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat oven to 350°F
- Prep a baking sheet
- In a medium sized mixing bowl, mash the bananas
- Mix in oats and chia seeds
- Add the egg, mix until fully combined
- Add the coconut oil and honey, mix
- Fold in chocolate chips if desired
- Form into large, round cookies and place on baking sheet
- Bake for 12-14 minutes
- Cool
- Cookies keep up to 1 week in the fridge and 2 months in the freezer
