How to Make Orange and Goat Cheese Bruschetta
Toasted Bread
A key component of a good bruschetta recipe is the bread! The small piece of toasted bread is what holds the goat cheese and the salsa so you can enjoy all the flavors together in one bite!
For this recipe I like to use a sourdough baguette. First of all because sourdough is my favorite kind of bread and I love how the flavor pairs with the toppings. And secondly because it is a hearty bread that is sturdy enough to not get flimsy when you put the toppings on.
In an effort to avoid turning on the oven in the summer heat, I toast the bread in some olive oil in a frying pan on the stove top. It only takes a few minutes on each side over medium-low heat to get the bread the perfect amount of toasty!
Basil Goat Cheese Spread
The goat cheese spread adds a delicious creamy layer that compliments both the bread and the orange tomato salsa. To make it you mix a little bit of olive oil, a pinch of salt and fresh basil into plain goat cheese. The olive oil helps soften it just a bit more making it really easy to spread on the toasted bread slices.
Orange Tomato Salsa
The orange tomato salsa is really the star of this dish. It has such bright flavors and it’s fresh and juicy – it just screams summer!
Making the salsa is simple! The Darling Oranges® are the base of the salsa, you will want to remove all rind and all of the pith (the white parts of the orange) and slice the orange flesh into small, bite-sized pieces. Next, halve the tricolored cherry tomatoes and mix them in with the oranges. The salsa is seasoned with fresh basil, dried oregano, olive oil and salt.
Make sure you pile each piece of the bruschetta with a generous helping of the orange tomato salsa!

Ingredients
Bread
1 sourdough baguette
2 tbsp olive oil
Orange Tomato Salsa
1 cup tricolored cherry tomatoes, halved
2 cups Darling Citrus navel oranges, chopped, rind and pith removed
2 tbsp fresh basil, chopped, divided
1/2 tsp oregano
1/4 tsp sea salt
1 tbsp olive oil
Goat Cheese Spread
4oz plain goat cheese
1 tsp olive oil
1 tbsp fresh basil
pinch of salt
Instructions
Bread
Slice the baguette into slices about 1-inch thick, you will need 12 slices
Brush both sides of the bread slices with olive oil
Toast the bread slices in a large frying pan over medium-low heat until golden brown on both sides
Orange Tomato Salsa
Add the tomatoes and oranges to a small bowl, mix
Add the fresh basil, oregano, salt and olive oil, toss
Goat Cheese Spread
In a small bowl mix together the goat cheese and olive oil
Fold in the fresh basil
Add the salt, mix
Bruschetta
Spread a thin layer of the goat cheese spread on each piece of toasted bread
Top with a generous helping of the Orange Tomato Salsa
Serve immediately
