Honey Apricot Glazed Drumsticks
These Honey Apricot Glazed Drumsticks are the perfect appetizer! They are cooked first in the Instant Pot to make them fall-off-the-bone tender, then coated in a delicious honey apricot glaze and finished off in the oven on broil to crispy perfection.Β
The biggest game day of the year is just days away! No matter who you are routing for, or if you are just there for the commercials (…guilty), one thing we can all agree on is a Super Bowl wouldn’t be complete without the best game-day appetizers.
These Honey Apricot Glazed Drumsticks come together in under 30 minutes! Less time cooking, more time vegging!
First you will cook the drumsticks in the Instant Pot, they only take 8 minutes at high pressure. Cooking them in the Instant Pot first instead of baking them in the oven is a game changer (pun intended π ). In the oven the juices start to cook out leaving you with dry drumsticks. This Instant Pot method seals in the juices making the meat fall-off-the-bone tender.
You will finish them off in the oven under the broiler to get that sought after crispy skin. After they finish in the Instant Pot you will coat them in a flour mixture and then a thick, delicious honey apricot glaze. They only take about 6 minutes under the broiler – 3 minutes on each side. At this stage you have to be attentive so they do not burn!
After removing them from the oven, coat with the glaze one more time to ensure extra, sticky deliciousness! Top with a squeeze of lime juice and a sprinkle of cilantro before serving.

Ingredients
1 cup water
4-pounds chicken drumsticks (about 12)
1 cup apricot preserves
1 tbsp worcestershire sauce
1 tbsp apple cider vinegar
1 tbsp dijon mustard
2 tbsp honey
2 cloves garlic, crushed
1/2 tsp salt
1/4 tsp ground coriander
2 tbsp cold water
1 tbsp corn starch
1/2 cup flour
1 tsp baking powder
1/2 tsp salt
chopped cilantro
lime
Instructions
Set up your instant pot with the wire rack
Add 1 cup water to the pot
Layer the drumsticks in the pot on top of the wire rack
Turn instant pot on “pressure cook”, set to high for 8 minutes*
Lock lid on instant pot and set pressure release valve to “sealing”
While the drumsticks are cooking, prepare the glaze
Add apricot preserves, worcestershire sauce, apple cider vinegar, dijon mustard, honey, garlic, salt and coriander to a small, heavy bottomed sauce pan
Place pan over medium heat
Bring to a low boil
In a small bowl dissolve the cornstarch into the 2 tbsp of cold water
Add cornstarch mixture to pan, whisk
Return to a low boil
Reduce heat to a low, simmer for at least 5 minutes or until ready to use
When instant pot beeps that it is done, let the pressure naturally release for 5 minutes
Switch the pressure release value to “venting” to release any remaining pressure
Unlock and remove lid, allow to cool 2-3 minutes
When they are safe to handle, remove drumsticks and place on a large plate
In a shallow bowl, whisk together flour, baking powder and 1/2 tsp salt
Remove glaze from heat, pour 3/4 of it into a shallow bowl, reserve the rest
Line a large baking sheet with aluminum foil, place a wire baking rack on top of it
Working one drumstick at a time, toss in flour mixture to coat and then in apricot glaze, place on wire rack
Repeat with each drumstick
Make sure your oven is set up with 1 rack in the middle position
Turn oven on broil
Put tray in the oven on the middle rack
Being attentive so the drumsticks do not burn, broil for 3 minutes on 1 side, flip and broil for 3 minutes on the other side
Remove tray from oven
While the drumsticks are cooling, using a basting brush, slather on 1 more layer of apricot glaze
Allow to rest 2-3 minutes
Top with a squeeze of lime juice and chopped cilantro right before serving (optional)
Notes
*You can use frozen drumsticks, if they are frozen increase cook time to 12 minutes
