It’s taco time! I’ve said it before and I’ll say it again, I would be happy eating tacos every day for the rest of time. Every taco is a new adventure! I love how so many flavors can be wrapped together in a tortilla of happiness – the possibilities are endless!

How to Make Air Fryer Cauliflower
By now you guys know I am obsessed with the air fryer and for good reason. The cauliflower in these tacos comes out so much crisper than it ever would if you roasted it. And without crispy cauliflower, they would be majorly lacking in texture.
Cauliflower is SO easy to make in the air fryer. Toss the cauliflower florets in olive oil and then coat them in the spice mixture. Toss with a tablespoon of corn starch to evenly coat. Add the cauliflower to preheated, greased air fryer basket. Air fry at 400°F for 15 minutes. Every 5 minutes, give the basket a toss so that they cauliflower cooks evenly on all sides. That’s it!
Can I make this recipe vegan?
Absolutely! The only non-vegan ingredient is the sour cream in the avocado cream sauce. You can easily substitute this for a vegan sour cream or omit the sour cream and add an additional 1/2 avocado and 2 tbsp of olive oil.

Ingredients
Blackened Cauliflower
1 medium head cauliflower (about 4 cups florets)
1/4 cup olive oil
2 tsp paprika
1 tsp coriander
1/2 tsp cumin
1/2 tsp garlic powder
1/4 tsp cayenne pepper
1/4 tsp salt
1 tbsp corn starch
Pineapple Black Bean Salsa
1/2 cup pineapple, chopped small
1/2 cup black beans, drained and pat dry
1 tbsp red onion, thinly sliced
1 tsp dried cilantro
1 tsp lime juice
pinch of salt
Avocado Cream
1 large avocado
1/2 cup sour cream
1 tbsp lime juice
1/2 tsp smoked paprika
1/4 tsp salt
Kale
2 cups kale
1 tbsp olive oil
lime juice
salt
Taco Assembly
6 flour tortillas
1 avocado, sliced
lime wedges
Instructions
Blackened Cauliflower
Preheat air fryer on 400°F for 5 minutes
While air fryer is preheating, cut cauliflower off the head into florets
Add cauliflower to a large bowl and toss with olive oil
In a small bowl, combine the paprika, coriander, cumin, garlic powder, cayenne pepper and salt
Sprinkle the spice mixture over the cauliflower and toss to coat evenly
Sprinkle with corn starch, toss
Spray the air fryer basket with non-stick spray
Add the cauliflower*
Air fry for about 15 minutes, toss every 5 minutes so it cooks evenly
Remove cauliflower from basket and set aside to cool
Pineapple Black Bean Salsa
In a small bowl, mix together the pineapple, black beans, red onion, dried cilantro and lime juice
Season with salt to taste, set aside
Avocado Cream
Peel avocado and discard pit, add the flesh to the bowl of a food processor or blender
Add sour cream, lime juice, smoked paprika and salt
Process on high until smooth
Kale
Add the kale to a medium-sized bowl
Drizzle with olive oil and a squeeze of lime juice
Using clean hands, massage the kale until it softens and reduces by at least half
Season with a pinch of salt
Taco Assembly
To char the tortillas, heat a frying pan over medium heat
Add the tortillas 2 at a time, as soon as they start to smoke**, flip and repeat on the other side
Lay the charred tortillas between damp paper towels to keep them from drying out***
Spread a thick layer of avocado cream on the tortilla
Top with a generous amount of blackened cauliflower
Add a heaping spoonful of pineapple black bean salsa
Sprinkle with the massaged kale
Garnish with avocado slices and lime wedges
Repeat to assemble the rest of the tacos
Enjoy immediately
Notes
*depending on the size of your air fryer you may need to work in 2 batches
**watch them closely so they don’t burn
***for extra soft tortillas, pop them in the microwave, wrapped in damp paper towel for 20 seconds right before assembling
