Crust
- 18 full graham crackers
- 1/2 cup coconut oil, melted
Filling
- 3 egg yolks
- 1 can sweetened condensed milk (14 oz)
- Zest and juice of 2-3 key limes (about 1/2 cup – regular limes work too)
Instructions
For the crust
- Pre-heat oven to 350 degrees
- Grease a 8X8 baking pan
- Using a food processor, process 18 graham crackers on high until fine
- Add 1/2 cup melted coconut oil
- Process until graham cracker crumbs are moist
- Press graham crackers into bottom of the pan in an even 1/2 inch layer
- Bake for 10-12 minutes until set
For the filling
- While the crust is baking, in an electric mixer fitted with a whisk attachment, whisk 3 egg yolks on high for 2 minutes
- Slowly add the sweetened condensed milk while continuing to whisk on medium
- Slowly add the lime zest/juice mixture
- Once combined, whisk on high for 2 more minutes
- Pour lime filling on top of crust in an even layer
- Return pan to oven and bake for 15 minutes
- Chill in fridge for at least 2 hours or in the freezer 30 minutes before serving
