5 Ingredient Key Lime Pie Bars!

Good Morning! I hope you had a nice weekend! Our weekend felt pretty springy finally! We got out to a Nats game on Friday night and had some family over for our first BBQ of the season on Saturday! For dessert I made these super easy Key Lime Pie Bars!

They are made with just 5 ingredients – limes, sweetened condensed milk, egg yolks, graham crackers and coconut oil. As with any key lime recipe the key (no pun intended πŸ™‚ )  is in whipping the egg yolks to give the filling volume and then cooking it just enough that it sets, but does not over cook. The crust was a new experiment and it turned out great! It is made of just graham crackers and coconut oil! The coconut flavor is very subtle, no one seemed to notice it at all. I was worried it may not set as well as a typical graham cracker crust, but I think it was actually even easier to handle! I didn’t have an issues with it cracking and it was simple to cut.

Key Lime Pie Bars

Ingredients

Crust

  • 18 full graham crackers
  • 1/2 cup coconut oil, melted

Filling

  • 3 egg yolks
  • 1 can sweetened condensed milk (14 oz)
  • Zest and juice of 2-3 key limes (about 1/2 cup – regular limes work too)

Instructions

For the crust

  1. Pre-heat oven to 350 degrees
  2. Grease a 8X8 baking pan
  3. Using a food processor, process 18 graham crackers on high until fine
  4. Add 1/2 cup melted coconut oil
  5. Process until graham cracker crumbs are moist
  6. Press graham crackers into bottom of the pan in an even 1/2 inch layer
  7. Bake for 10-12 minutes until set

For the filling

  1. While the crust is baking, in an electric mixer fitted with a whisk attachment, whisk 3 egg yolks on high for 2 minutes
  2. Slowly add the sweetened condensed milk while continuing to whisk on medium
  3. Slowly add the lime zest/juice mixture
  4. Once combined, whisk on high for 2 more minutes
  5. Pour lime filling on top of crust in an even layer
  6. Return pan to oven and bake for 15 minutes
  7. Chill in fridge for at least 2 hours or in the freezer 30 minutes before serving

Apologies if I am breaking any rules about when Key Lime desserts are allowed to emerge for the season. Are they like white pants? Are we not supposed to be eating them until after Memorial Day? #breakingsocialnorms
